How do I make fresh strawberry sauce?!


Question: I made a gorgeous homemade almond sponge cake and would like to use up some of the fresh strawberries we have.
I would like a sauce beyond adding sugar to sliced strawberries. Cooking the berries is fine by me.

Strawberry Sauce Recipe
16 oz. frozen, unsweetened strawberries
2 Tbsp. granulated white sugar
2 Tbsp. orange juice
1/4 cup water
Place the strawberries, sugar and orange juice in a medium saucepan over medium high heat. Stir the mixture until the sugar is dissolved. Add the water. Bring to a boil, then reduce heat to medium low. Simmer, stirring occasionally to break up the strawberries, until the sauce thickens and the strawberries are soft, but still chunky.

Serve over angel food cake, frozen yogurt or ice cream immediately. Store any leftover sauce in the refrigerator in an air tight container up to 1 week or freeze, then thaw before serving.

Makes 16 servings.

Per serving: 16 calories, 0 g fat (0 g saturated fat), 0 mg cholesterol, 4 g carbohydrate, 1 g fiber, 0 g protein, 0% vitamin A, 19% vitamin C, 0% calcium, 1% iron

get strawberrys and mix them in with water then put it in the blinder.

1 cup sliced fresh strawberries
1 tablespoon sugar
3/4 teaspoon cornstarch
1/8 teaspoon almond extract

Combine the strawberries and sugar in a small bowl; cover and refrigerate for 2-3 hours. Drain, reserving juice. Set berries aside. Add water to juice to measure 1/2 cup; pour into a saucepan. Stir in cornstarch until smooth. Bring to a boil; boil and stir for 2 minutes. Remove from the heat; stir in extract. Pour over berries; fold gently. Chill. Serve over ice cream or cake. Yield: 3/4 cup.

I cook them with just sugar and a bit of cinnamon.
If they are washed and wet that is enough liquid.
I use this on pancakes with whipped cream too.
Don't have my recipe but it is like maybe 2 cups strawberries, half cup sugar, 1/4 tsp cinnamon.
Use the mixes of 5 berries or blueberries too for this.
You may have to do this to taste - remember strawberries are quite tart.
I would not add water - they have enough of their own.
