Chicken taco recipe?!
Answers: I want to make chicken tacos tonight but I am not sure the best way to cook the meat. I absolutely HATE boiled chicken so that is not an option. Do you think its best if I cube it and then cook it in a skillet? Or maybe I should grill it and THEN cut it into cubes? Or grill it and then shred it? What's the best way?
rub it down with taco seasoning and put it on the grill for about 4 mins each side...let cool a bit then cut into strips .....heat 2 Tbs oil...add 1 sliced onion .cook for 5 mins on med heat...then add chicken .....

I'd cook the chicken first and cube or shred (whichever you prefer) after.
Shred is by far the best way. The more you shred it the more sauce will be coating the surface area of the chicken. If you cube it you'll have sauce coating the cube with blandness on the inside.
Whether you grill or use a skillet should be ok either way. Grill might give more flavor but all the dry heat in the BBQ might dry out the meat, it's up to you.
Turkey or Chicken Pita Tacos
INGREDIENTS
* 1 tablespoon vegetable oil
* 1 tablespoon cider or red wine vinegar
* 1 teaspoon chili powder
* 1 teaspoon ground cumin
* 1/4 teaspoon salt
* 1/4 teaspoon pepper
* 1 cup cubed cooked turkey or chicken
* 1 medium green pepper, chopped
* 1 medium sweet red pepper, chopped
* 1 small tomato, chopped
* 1 cup chunky salsa
* 3 green onions, thinly sliced
* 1 (2.25 ounce) can sliced ripe olives, drained
* 1 garlic clove, minced
* 1 cup shredded Cheddar cheese
* 5 (6 inch) pita flat breads
DIRECTIONS
1. In a small bowl, combine the first six ingredients; set aside. In a large bowl, combine the turkey, peppers, tomato, salsa, onions, olives and garlic. Stir the oil mixture; pour over the turkey mixture and mix well. Stir in cheese. On a lightly greased griddle, heat pita breads on both sides. Spoon about 1/2 cup turkey mixture into each half.
Easy Chicken Soft Tacos:

Ingredients
10 (8 inch) flour tortillas
1 tablespoon vegetable oil
1 lb boneless skinless chicken , cut into 1 inch pieces
1 (1 1/4 ounce)package taco seasoning mix
2 tablespoons water , divided
1 (16 ounce)can refried beans
3/4 cup taco sauce
2 cups shredded monterey jack cheese
Directions
1. Preheat oven to 375 degrees; place tortillas on baking sheet.
2. Heat oil in large skillet; add chicken; cook until no longer pink; add 2 T seasoning mix and 1T water; mix well Combine refried beans, remaining seasoning mix and remaining water in small bowl.
3. Spread bean mixture evenly over each tortilla.
4. Layer each with a drizzle of taco sauce.
5. Top evenly with chicken mixture, cheese and desired toppings (chopped tomatoes, sliced green onions, etc.).
6. Bake for 5-10 minutes or until cheese melts; fold each in half.
