Need Help Baking Fish!!?!


Question: I bought some lovely Mahi-Mahi from Trader Joe's yesterday and I want to bake it in foil. I've never done it before so I need some help. HELP! Temperature, time, spices, etc! HELP! Would it work on the grill as well?

I like mine simple...butter, lemon juice .dill and salt and pepper.
as for cooking time and temp....400 for 15 mins

Alton Brown did a Good Eats show about pouch cooking and he recommends NOT cooking fish in foil pouches, but in parchment paper ones...

Take a 15 by 36-inch piece of parchment paper and fold in 1/2 like a book. Draw a large 1/2 heart on paper with fold of paper being the center of the heart. Cut out heart and open. Lay veggies and fish in the center to one side of the heart. Fold other side of heart over fish and starting at top of heart shape, fold up both edges of parchment, overlapping folds as you move along. Once you reach the end tip, twist several times to secure tightly.


Here is a recipe that I like, that I've successfully made with the above mentioned pouch...

4 mahi steaks
3 tablespoons unsalted butter
1/2 pound Shiitake or Portobello mushrooms, cut julienne
3 shallots, peeled, sliced
1 teaspoon coarse salt
1/2 teaspoon finely ground black pepper
1 med. yellow squash (could use zucchini, sliced thinnly)
1/4 cup dry white wine
3 tablespoons fresh flat leaf parsley, chopped
1/2 lemon, juiced

Preheat oven to 375 degrees. Cut out 4 heart shapes from parchment . Place seasoned fish on 1 side of parchment. Heat medium skillet on medium high heat. Add butter and melt. Add mushrooms and saute until slightly golden. Add shallots, salt and pepper. Cook 2 minutes. Add squash and wine. Cook until almost dry. Add parsley and lemon juice. Cool. Divide mixture between fish fillets, mounding slightly. Fold second half of parchment over fish, enclosing completely. Fold edges over to secure tightly.
Place parchment packages on baking sheet. Bake until packets are puffed and fish is cooked through, about 10-15 minutes.

I have two recipes for baked Mahi Mahi so I guess it depends on what you have a taste for. You can also bake these foil packets on the grill. I usually cook for 2 so you can half the recipe if it is just for yourself.

Lemon Pepper Mahi Mahi

2 Mahi Mahi Filets
3 tsp. lemon pepper seasoning
4 tbl. butter
2 sheets of foil

Place each filet on a sheet a foil. Season with lemon pepper and place 1 tbl. of butter on top of each filet. Close each packet and bake at 400 degrees on baking sheet for 30-45 minutes depending on the thickness. The fish will flake apart with a fork when done.
The most important thing is when the fish are done, remove them from the juices that they cooked in. I usually place them on a separate plate and then place 1 tbl. of butter on top of each filet.
If you are placing these on a grill you may have to let them grill for 45 minutes to 1 hour. Depending on if you are using an electric, gas, or charcoal grill.

Pacific Honey Barbeque Fish

2 Mahi Mahi or Swordfish Filets
1/4 cup honey
2 tbl. lime juice
2 tbl. soy sauce
2 tbl. hoisin sauce
1 tsp. minced ginger root

Combine ingredients, then add fish filets and marinate for 1 hr.
Place on a sheet of foil and you can either leave it open or close it as a packet.
Bake at 400 degrees for 30-45 minutes.

You can also place these directly on the grill for 30 minutes.
