Tomato sauce recipes??!


Question: I'm making dinner tonight and i really could use some good tomato sause recipies. I need a recipie that calls for diced tomatoes. Also i really like tomato sauce with sugar in it. :)

? c olive oil
1 medium onion, preferably white, diced
5 cloves garlic, minced
28 oz can diced tomatoes or tomato sauce
6 oz tomato paste
1-2 T sugar (optional)*
? c minced oregano
1 T black pepper
1 t any/all of the following: rosemary, sage, thyme, or other herbs
? c grated parmesan cheese (optional)

Directions Heat the olive oil over medium heat and sauté the onion for about 5 minutes. When it starts becoming translucent, add the garlic and sauté another 5 minutes.
Turn up the heat to high and add the tomatoes/tomato sauce and tomato paste. Stir well to incorporate the paste.

Add the optional sugar, then bring to a boil. Lower heat, add the herbs and pepper, cover, and let simmer for at least 15 minutes, stirring occasionally. Note: be very careful when you lift the lid - boiling sauce may splash your hands.

Lower heat, stir in optional cheese, and simmer for another 5 minutes or so. Taste and adjust seasonings. If the sauce is too thick, you can add some water.

20 Roma tomatoes, halved and seeded
1/4 cup olive oil
1/2 teaspoon kosher salt
1 teaspoon pepper
1 cup finely diced onion
2 teaspoons minced garlic
1 tablespoon finely chopped oregano leaves
1 tablespoon finely chopped thyme leaves
1 cup white wine

Preheat oven to 325 degrees F.
In 2 (13 by 9-inch) pans place tomato halves cut side up. Sprinkle with oil, salt and pepper, onion, garlic, and herbs. Bake tomatoes for 2 hours. Check the tomatoes after 1 hour and turn down the heat if they seem to be cooking too quickly. Then turn the oven to 400 degrees and bake another 30 minutes. Remove from the oven and process tomatoes through a food mill on medium dye setting over a small saucepan. Discard skins. Add white wine, bring to a boil, reduce heat to low and cook for 5 minutes.

2 tbsp. olive oil
1 sm. onion, chopped
2 garlic cloves
1 tbsp. sugar
2 tsp. basil
1 1/2 tsp. salt
1 (16 oz.) tomatoes
1 (6 oz.) tomato paste

Cook onion and garlic in oil. Stir in rest of ingredients. Cook covered for 20 minutes, until thickened, stirring occasionally. Makes 3 cups, enough for 6 servings of spaghetti.

How much tomato sauce do you need? I would suggest buying some extra cans of tomato sauce just to make sure you have enough....

If you have a cast iron pan, I think that makes the sauce taste better ... if not, use whatever you have.

You can buy diced tomatoes with garlic and onion or you can buy regular diced tomatoes and add your own garlic and onion - that's up to you.

The following is a taste/cook as you go/change it to fit your needs recipie I use... It takes about 30 to 45 minutes but is yummy. :)

Chop up an onion and brown it on low to medium heat, and a couple of cloves of garlic or the equivalant of garlic powder (whatever you have on hand). On medium to medium high heat, add a can of whole tomatoes with the juice, add another can of whole tomatoes without the juice. Let this cook and simmer down (the tomatoes will break apart). Add 2 to 3 cans of diced tomatoes one at a time, every time the sauce reduces down, add a little more of the juice that comes in the can of the tomatoes (or alternatively you can use tomato sauce if you don't want the salt). Then sprinkle some basil, italian seasoning, oregano, parsley, and 1/4 cup of brown sugar... Stir together... add 1 can of tomato soup ..... If it is too thick add more tomato juice, if it is too thin add tomato paste. Taste. Add more spice and sugar if needed.

This probably sounds more complicated then it is..... it's not a fussy recipie, you just have to keep reducing the liquid until it looks the way you like your sauce.. I like chunky tomatoes in my tomato sauce. :)

Edit: You can also add parmesan cheese at the end. =)

Sweet Tomato Sauce

This meaty tomato sauce contains onion, garlic, canned tomato sauce, tomato paste, and white wine, plus seasonings which include basil, oregano, thyme, ground red pepper, cinnamon and cocoa powder.


**I would substitute the diced tomatoes-drained- for the tomato sauce.
this sounds good though and I am going to try it tonight.

Ingredients:
1 tbsp canola oil
6 cloves garlic, minced
1 small onion, chopped
1 lb lean ground turkey or beef
1 15-oz can tomato sauce
1/4 cup red wine vinegar
4 oz tomato paste
1/4 cup dry white wine
2 tbsp chili sauce
1/4 tsp chili powder
1 tsp basil
1/4 tsp cinnamon
1 tsp oregano
1/8 tsp ground cayenne pepper
1/2 tsp ground thyme
1 tbsp parsley flakes
1 bay leaf
1 tbsp unsweetened cocoa powder


Method
In a medium-large pot, saute oil, onion and garlic over med-high heat. Add and brown meat, but do not drain. Add tomato sauce and tomato paste. Stir well. Add rest of ingredients and stir until well-blended. Reduce heat to low and simmer for 1 to 1 1/2 hours. Serve warm with your favorite pasta.
