What's the best kind of skillet to have?!
Answers: I am beginning to learn to cook and want to know whats the best kind of skillet to cook shicken breast and steaks in. I also like to smother things like pork chops. What is the best kind of skillet for this?
Cast Iron - hands down. Once properly seasoned they will last your whole life and can be heated to very high temperatures for searing meats as well as covered for even slow cooking at lower temps. Because of the conductive metal they heat more evenly and are more energy efficient. Save yourself some money and buy a good set at a camping store or look on the bottom shelf at linens and things - they are sold in a set of 3 for around $35.
How to season cast iron:

Cloth
Steel Wool
Salt
Vegetable Oils
Mild Soap
Paper Towels
Step 1:
Scrub a new skillet with steel wool to remove its protective coating, and wash with mild, soapy water. (If reseasoning an old skillet, just scrub with hot water and a brush.)
Step 2:
Use a paper towel to coat the skillet with vegetable oil.
Step 3:
Heat, uncovered, for 2 hours in an oven at 250 degrees F.
Step 4:
Let cool before use.
Always heat dry your cast iron to prevent rusting and it will become a lovely black - then it is perfect!

cast iron. if you take care of it it'll last a friggen life time. it's good for frying. stay away from aluminum. usually you get what you pay for. check out a resturaunt supply store. they have good stuff.
Cast iron is always a good choice. Heres how to take care of it:
1) Never use soap to clean it. Use hot water and a scrub brush or nylon pad. You can heat the pan slightly for easy cleaning. Never air dry. Use paper towels to dry.
2) Never store food in it. Always leave the lid off during strorage. Never cook tomatoes or anything else acidic in your cast iron pan.
3) Season as needed (this provides a non-stick surface). Rub some lard or bacon grease on the pan and bake 15 minutes in a 300 F oven. Drian off the grease and bake another 2 hours. Wipe clean with paper towels. Never season with oil. This will make it sticky.
Thats it! Pretty simple.
For chicken breasts and steak, get cast iron.
For eggs or sauteeing veggies, get a nonstick.

You can never go wrong with Cast Iron...If you can find one at a flea market even better....If you find it for under $30 its a steal....
You should have another smaller skillet...one for cooking small items like eggs .....a saute pan is good for that...AND when you get really good at cooking you can flip things and impress your friends.....Get something of good quality even if it cost a little more....It will prove to be a worthy investment....
I advise an All-Clad 12 inch skillet , Cast iron while certainly an excellent choice, is way too heavy for many people . Stainless steel All -Clad will brown just as well , be just as burn resistant, look great and weigh way less . Albeit at a greater cost$.
