Dump Cake Recipe
INGREDIENTS:
* 1 (20 ounces) can crushed pineapple, undrained
* 1 (21 ounces) can prepared more fruit cherry pie filling
* 1 (18.25 ounces) box yellow cake mix
* 2 sticks of butter or margarine, each cut into 12 slices
* 1/4 cup chopped nuts (your choice - optional)
PREPARATION:
Preheat oven to 350 degrees F (325 for glass baking dish). Have a 9 by 13-inch baking pan ready.
Dump undrained pineapple baking dish or pan and spread it out evenly.
Using a spoon, dump globs of cherry pie filling evenly on top of the pineapple.
Sprinkle the cake mix evenly over the cherry and pineapple layers.
Cut butter into slices with a butter knife and place slices evenly over cake mix.
Sprinkle nuts on top if you're using them.
Bake for one hour. Use heavy oven mitts to remove the dump cake from oven or let your older helper do it.
To serve, scoop cake out with a large spoon like a cobbler, and dump it on a nice plate. A scoop of vanilla ice cream is delicious with dump cake. Serve warm or cold.

I personally think these can never taste so good as when made in a cast iron skillet. Of course, if you don't have a cured skillet, you'll have to use a regular pan.
Dot gernerous amounts of butter on the bottom of the pan. Sprinkle a layer about 1/2" thick over that. Place your pineapple rings down (i do enough to cover the whole bottom) then put marichino cherries in the holes of the pineapple rings (ZING!) pour a prepared yellow cake mix over the top, bake according to the cake mix (if you wanna go scratch on the cake good on ya).
You should be able to turn the skillet (or pan) over and the cake will come out. Slice it up or eat the whole thing yourself :O
Voila! yummy goodness. I love these cakes, I always had them for my birthday cakes instead of the traditional frosted cakes. :)

Skillet Pineapple Upside-Down Cake
2 eggs
6 tbsp. pineapple juice
2/3 cup sugar
1 cup sifted flour
1 tsp. vanilla
1/4 tsp. salt
1/3 tsp. baking powder
1 can pineapple rings
1/2 cup packed brown sugar
1/3 cup butter
Place brown sugar and butter in a 12-inch cast-iron skillet and allow butter to melt in oven. Then arrange pineapple rings in the bottom of the pan.
Beat the eggs for five minutes. Then add the rest of the ingredients and mix well. Pour batter in skillet over the pineapple rings and brown sugar/butter mixture. Bake in a 350 degree oven for 45 minutes.

Pineapple Upside-Down Cake
1/2 cup packed brown sugar
1/4 cup margarine, melted
1 small can pineapple slices, drained - reserve juice
2 eggs, separated
1/2 cup sugar
3/4 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/4 cup pineapple juice
Preheat oven to 350 F
Mix brown sugar and margarine, spread in bottom of 8 or 9 inch springform pan. arrange pineapple slices on top of sugar mixture.
Beat egg yolks until thick and lemon coloured. Gradually add sugar and beat well.
Add flour, baking powder, salt and pineapple juice to egg yolk mixture, mix well.
In another bowl, beat egg whites until stiff peaks form, fold into batter.
Pour batter into prepared pan, covering pineapple. Bake 30-35 minutes.
Serve with whipped cream.
Easy Pineapple Upside-Down Cake
1 (9-ounce) package yellow cake mix (such as Jiffy)
1 cup light brown sugar, packed
1 stick (1/2 cup) margarine or butter
1 (14.5-ounce) can pineapple slices
Maraschino cherries
1. Mix yellow cake mix as directed on package, using juice from pineapple instead of water, add water to make up necessary amount called for, if needed.
2. Melt butter and brown sugar over low heat in a large 10-inch pan or iron skillet.
3. Place pineapple rings onto butter/brown sugar mixture in pan, and put cherries in rings. Pour cake batter on top.
4. Bake at 350*F for 1 hour. Let stand for 5 minutes and flip over onto a large cake plate.
Makes one (10-inch) cake. Enjoy!
Oh, I'm so awful... I make mine from a box mix.
First, I purchase a Pineapple Duncan Hines Cake Mix, pineapple slices, maraschino cherries without stems, and brown sugar if I need to.
I prepare the mix as directed on the box, then set aside.
I then line the bottom of my pan(s) with pineapple rings from the can, and put halved maraschino cherries in the centers of the rings and also wherever else they'll fit. On top of this, I liberally sprinkle brown sugar.
Pour the cake mix into the pan on top of the fruit, and bake as directed. When the cake is done, I pull it out of the oven to cool, and while it is cooling, I combine the pineapple juice and some brown sugar into a small pan and heat until the sugar is dissolved.
When the cake has cooled, I piece it all over it with something sharp that I have handy (toothpicks, skewers, a fork...) and pour the warm sugar / juice mixture over it. Be careful not too add too much, or it will make the cake fall apart. Let the juice soak in, and serve... or let sit overnight and serve the next day. (I prefer to let it sit.)
