Alfredo sauce...
INGREDIENTS
1 pint heavy whipping cream
1/2 cup butter
1 1/2 cups grated Parmesan cheese


DIRECTIONS
In a medium saucepan combine whipping cream, butter or margarine, and grated Parmesan cheese. Cook over medium low heat until smooth. Remove from heat. Sauce will thicken upon standing.

saute garlic with seasonings for a bit, add heavy cream, butter, reduce and Parmesan cheese. whala!

This is the recipe that I use. I add a little extra cheese in mine because I like the tanginess.

1/2 cup butter or margarine
1/2 cup whipping (heavy) cream
3/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/8 teaspoon pepper

Heat butter and whipping cream in 2-quart saucepan over low heat, stirring constantly, until butter is melted. Stir in cheese, salt and pepper.

Medium saucepan
1/2 cup butter

Romano cheese

Step 1:
Grate your Parmesan and Romano cheeses. Start with one and a half cups of the Parmesan. Grate as much Romano cheese as you would like in your Alfredo sauce. Pour a cup of heavy cream and add one-half cup of butter into a nonstick pan.

Step 2:
Heat on low until the butter melts. Stir into the saucepan the Parmesan cheese, some Romano cheese to taste, 1/2 tsp. of salt and a dash of black pepper. Continue to heat the pan until the sauce has slightly thickened.

Step 3:
Remove the saucepan from the heat to add your pasta. Toss the pasta to coat it with the Alfredo sauce. Place the saucepan back onto the stove. Heat the Alfredo sauce for another minute or until it has completely thickened.

Step 4:
Serve the fettuccine Alfredo sauce with your pasta. This recipe makes about six servings.

1/2 cup cream cheese
1 cup milk 0-2 %
3 tbsp freshly grated Parmesan cheese
1 clove of garlic
1 tbsp pepper
1/2 tsp salt
3 tbsp dry parsley/ 1/2 cup fresh
The best way to make this consistent is to use a blender, put cream cheese, milk, Parmesan, cheese, garlic, pepper and salt in blender. Blend until there are no clumps, poor into sauce pan on medium heat, cook for about 10 minutes, well cooking add parsley, is fresh chop finely and extra for garnish.
Cook your favorite pasta, I recommend spaghetti, if you want you may want to add chicken bacon any one of your favorite meats, I find it goes great with clams.
Pour desired amount over pasta, cook meat in sauce to absorb flavour into the meat, cook sea food in different pan and than add over pasta before pouring Alfredo Sauce.
If you find the original sauce using heavy cream and butter to be too heavy, then this modified, lighter version may be a healthier choice for you.

ALFREDO SAUCE – NO CREAM CHESSE
4 tablespoons butter
4 tablespoons flour
1 cup cream (or half and half or milk)
1 cup chicken broth
1 cup shredded Italian cheeses (Mozzarella, Romano, etc.)
1/2 cup Parmesano Reggiano cheese (or plain Parmesan)
3 tablespoons fresh or 1-2 tablespoons dried parsley
4-5 cloves garlic, minced
1/2 teaspoon fresh nutmeg
1/4 cup sherry or white wine
salt and pepper
Melt butter and add flour. Cook for 2-3 minutes, stirring constantly to cook flour. Add cream and broth all at once and blend well. Add the remaining ingredients and stir until cheese has melted and sauce is smooth.
Pour over chicken, shrimp or pasta.
Additional cheese can be added to the topping, if desired. Bake in oven until cheese is golden brown.

Things You’ll Need:

* thick, wide pan (I like to use my cast iron skillet because it heats very evenly)
* butter (lots, maybe 3/4 of a stick for 2 people)
* cream (a few ounces)
* parmesan (a few ounces)
* olive oil (couple of tablespoons) (optional)

Step 1:
Put your pan on medium heat and melt butter. I tend to melt about half a stick of butter first and base all my other proportions off this.

Step 2:
Add twice as much cream as there is butter while stirring slowly and constantly.

Step 3:
The heat should be high enough to bubble the sauce just a little. We're going to cook it for a few minutes to reduce the cream. You can increase the heat to reduce cooking time, but you'll have to stir faster.

Step 4:
Stir in parmesan cheese. We're going to melt it into the sauce. Add a little olive oil.

Step 5:
Keep stirring until your sauce thickens up. Serve whenever you think it's thick enough.

Heat Heavy Cream and milk together. When that gets hot add in the butter and cheese. Add salt pepper and nutmeg. Continue heating until cheese is melted and sauce is hot.

I know the nutmeg sounds odd but it works! It is what makes you go "hmmmmmm... what is that??)

I got this recipe from Haven on Y/A. It tastes just like Olive Garden's.

Fettuccine Alfredo

1/2 cup butter
2 tablespoons cream cheese
1 pint heavy cream
1 teaspoon garlic powder
to taste salt
to taste black pepper
2/3 cup grated parmesan cheese (preferably fresh)
1 lb fettuccine , prepared as directed

Directions
1. In a medium saucepan, melt butter.
2. When butter is melted, add cream cheese.
3. When the cream cheese is softened, add heavy cream.
4. Season with garlic powder, salt, and pepper.
5. Simmer for 15-20 minutes over low heat, stirring
constantly.
6. Remove from heat and stir in parmesan.
7. Serve over hot fettuccine noodles.
