1/2 cup cornstarch
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon sugar
1/2 teaspoon salt


1 egg
2/3 cup ice water
Yellow food coloring (optional)


Oil for deep frying
Your choice of dippers; shrimp, scallops, chunky-cut chicken and vegetables are good.


Sift together the dry ingredients.

Beat egg slightly and mix with the water and a few drops of the food coloring, if desired.

Add the dry ingredients. Stir only until mixed; mixture will be slightly lumpy.

Dip shrimp, chunky-cut chicken and vegetables, etc. into the batter and deep fry until golden brown. Drain on paper towels.

rice flour or flour, sparkerling water, and ice if you have it and baking powder

2 ozs Cornflour
6 fluid ozs ice cold soda water
pinch of salt.
sieve flour and salt into a bowl mix together with soda water until it is just mixed but slightly lumpy. It needs to be almost transparent.

3/8 c. flour

1 egg white
1/2 tsp. salt
1/2 c. water
1/4 tsp. garlic powder
1 tsp. parsley
1/2 tsp. paprika
Separate eggs. Beat white until frothy and light. Do not overbeat, white should be very liquid and should not reach a stage where a peak will hold.
Fold all ingredients together and beat only until smooth.

Dip fish/prawns in flour, then dip into tempura batter. Fry in hot oil.

i go for a real simple recipe, self raising flour mixed with beer & a few spices for flavouring.. saves messing about with mixing half the stuff in the kitchen
