Trust me, these are perfect!

Cut-Out Sugar Cookies
1 ? cups powdered sugar
1 cup butter or margarine
1 egg
1 tsp vanilla extract
? tsp almond extract or more vanilla extract
2 ? cups flour
1 tsp baking soda
1 tsp cream of tartar
--Cream sugar, butter, egg, vanilla and almond extract.
Add flour, baking soda, and cream of tartar. Mix well. Roll out and use your favorite cookie cutters. Bake at 375 degrees for 7-8 minutes on an ungreased cookie sheet. Let cookies cool then frost and decorate if desired.

4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder

DIRECTIONS

Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven. Cool completely.

SUGAR COOKIE RECIPE

INGREDIENTS:
1 cup butter
1/2 cup sugar
1 large egg
1 tablespoon vanilla
3 cups flour
1/2 teaspoon baking powder

PREPARATION:
Cream butter and sugar until light; beat in egg and vanilla. Sift flour and baking powder together; stir into creamed mixture.
Refrigerate for about 1 hour, or until dough is firm enough to roll.
On a floured surface, roll 1/8-inch thick and cut with cookie cutters.

Bake 10 to 12 minutes at 350°.
Makes about 7 to 8 dozen small sugar cookies, or fewer with large cutters.

Cream Cheese Sugar Cookies

This is THE BEST~~~ A soft, chewy, and flavorful sugar cookie. It is very important to chill the dough, as it is too sticky to roll unless well chilled.

INGREDIENTS
1 cup white sugar
1 cup butter, softened
1 (3 ounce) package cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 egg yolk
2 1/4 cups all-purpose flour

DIRECTIONS
In a large bowl, combine the sugar, butter, cream cheese, salt, almond and vanilla extracts, and egg yolk. Beat until smooth. Stir in flour until well blended. Chill the dough for 8 hours, or overnight.
Preheat oven to 375 degrees F (190 degrees C).
On a lightly floured surface, roll out the dough 1/3 at a time to 1/8 inch thickness, refrigerating remaining dough until ready to use. Cut into desired shapes with lightly floured cookie cutters. Place 1 inch apart on ungreased cookie sheets. Leave cookies plain for frosting, or brush with slightly beaten egg white and sprinkle with candy sprinkles or colored sugar.
Bake for 7 to 10 minutes in the preheated oven, or until light and golden brown. Cool cookies completely before frosting

Ultimate Sugar Cookies
Yield: 6 dozen cookies
Ingredients:
1 stick Crisco? Butter Shortening Sticks
1 cup sugar
1 large egg
2 tablespoons milk
1 tablespoon vanilla extract
3 cups Pillsbury BEST? All Purpose Flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Decorations: granulated sugar, colored sugar crystals, frosting or assorted candies

Preparation Directions:
BEAT shortening and sugar in large bowl, with an electric mixer at medium speed until smooth and creamy. Beat in egg, milk and vanilla extract until well blended.
COMBINE flour, baking powder and salt. Gradually add flour mixture to creamed mixture at low speed until well blended. Wrap dough in plastic wrap and refrigerate 1 hour for easier handling.
HEAT oven to 375oF. Roll 1/3 of dough at a time on lightly floured surface to 1/8-inch thickness. Cut dough with 2 to 3-inch floured cookie cutters. Place 1 inch apart on ungreased cookie sheets. Sprinkle with sugar, if desired.
BAKE 5 to 9 minutes or until edges begin to brown. Cool 2 minutes on baking sheet. Transfer cookies to cooling rack. Frost and decorate as desired.
VARIATION
DROP COOKIE: Do not refrigerate dough. Drop by rounded measuring tablespoonsful of dough 2-inches apart on an ungreased baking sheet. Bake at 375oF. for 7 to 8 minutes.

Okay I also have a hard time with sugar cookies. I use the betty crocker bag were you add oil, water, and and egg. I know it's cheating but it makes the perfect sugar cookie, crisp on the outside chewy on the inside.
