1 loaf frozen white bread dough, thawed (recommended: Bridgford)
Flour, for dusting surface
1 egg, beaten
1/2 cup coarse salt
Topping options, recipes follow
Divide dough into 14 pieces. On a lightly floured surface, roll each piece of dough into a 16-inch rope, and then form into a pretzel shape. Transfer dough to the refrigerator until ready to boil.
Preheat oven to 400 degrees F.

In a large pot, bring 4 quarts of water to a boil. Add pretzels, 3 at a time, and cook until pretzels rise to the surface, about 2 minutes. Remove and drain on paper towels. Arrange pretzels 3 inches apart on buttered sheet pans. Brush with beaten egg. Sprinkle with coarse salt or with choice of toppings. Bake for 15 to 20 minutes or until browned.

For cinnamon pretzels:
1/2 cup powdered sugar
1 tablespoon ground cinnamon
1/4 cup honey

In a small bowl, combine powdered sugar and cinnamon with 1 to 2 tablespoons water (enough water to make a glaze). Set aside. Roll out dough into ropes, form into pretzels, and poach as directed above. Just before baking, brush pretzels with honey. Remove pretzels from oven, and while still warm, brush with cinnamon-sugar glaze.

After spending so much money on those Mall bought pretzels, I thought I'd try making some myself. So here's a recipe that has worked for me. These pretzels are a bit sweeter than other types and are buttery. These are great plain with a bit of pretzel salt or coated with cinnamon and sugar. Once finished, dip the hot pretzel in melted butter and coat with your favorite flavors. Enjoy

INGREDIENTS
4 teaspoons active dry yeast
1 teaspoon white sugar
1 1/4 cups warm water (110 degrees F/45 degrees C)
5 cups all-purpose flour
1/2 cup white sugar
1 1/2 teaspoons salt
1 tablespoon vegetable oil

1/2 cup baking soda
4 cups hot water
1/2 cup powdered sugar
1 tablespoon ground cinnamon
1/4 cup honey

DIRECTIONS
In a small bowl, dissolve yeast and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes.
In a large bowl, mix together flour, 1/2 cup sugar, and salt. Make a well in the center; add the oil and yeast mixture. Mix and form into a dough. If the mixture is dry, add one or two tablespoons of water. Knead the dough until smooth, about 7 to 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour.
Preheat oven to 450 degrees F (230 degrees C). In a large bowl, dissolve baking soda in hot water.
When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape. Once all of the dough is all shaped, dip each pretzel into the baking soda solution and place on a greased baking sheet. Sprinkle with sugar/cinnamon/honey
mix.
Bake in preheated oven for 8 minutes, until browned

You can just buy them, it's so much easier,I would google

Cinnamon pretzels
1 package active dry yeast
1 cup warm water
1/2 cup nonfat dry milk solids
1/3 cup sugar
1/3 cup soft butter or margarine
1/2 teaspoon salt
1 egg
3 1/2-4 cups all-purpose flour
4 tablespoons butter or margarine , soft
1/4 cup brown sugar , packed
1 teaspoon cinnamon
coffee glaze
1 cup unsifted powdered sugar
2 tablespoons butter or margarine
2 tablespoons hot coffee
Directions
1In large bowl, dissolve yeast in the water.
2Add dry milk; stir.
3Let stand 5 minutes until yeast foams.
4Beat in sugar, 1/3 cup butter, salt, egg and 2 cups flour until smooth and glossy.
5Beat in 1 cup more flour and let dough stand for 15 minutes.
6Sprinkle 1/2 cup flour over dough; turn out onto board and knead until smooth and satiny, adding flour just to prevent stickiness.
7Turn dough into oil bowl, cover and let rise until doubled, 1 to 2 hours.
8Turn dough onto lightly floured board and roll to 12 by 14 inches.
9Spread half of the dough with 4 tbsp.
10soft butter.
11Mix brown sugar and cinnamon and sprinkle over butter.
12Fold unfilled dough over filling and press edges together.
13Cut into 12 equal strips.
14Roll strips into 20-inch smooth strands.
15Twist into pretzel shape and place on baking sheet and let rise until doubled.
16Bake at 375 for 10 to 13 minutes or until golden and brush with glaze.
17Glaze: Mix powdered sugar with butter or margarine and enough coffee to make a smooth, but not thin icing.
18It will melt over the hot pretzels to glaze them.


Cinnamon Raisin Soft Pretzels
1 ounce active dry yeast
1 1/2 cups warm water
2 tablespoons brown sugar
1 teaspoon salt
2 cups cake flour
3/4 cup raisins
2 tablespoons baking soda
2 cups hot water
3 tablespoons butter , melted
3/4 cup sugar
1 teaspoon ground cinnamon
Directions
1In large bowl, dissolve yeast in warm water, stir in brown sugar and salt -- add cake flour and stir well.
2add enough all purpose flour to form a soft dough.
3stir in raisins, turn onto floured surface.
4knead till smooth -- about 6-8 minutes.
5place in a greased bowl, turn to grease top.
6cover and let rise at least 40 minutes --
7punch dough down.divide into 14 balls.
8roll each ball into a 15" long rope.
9dissolve baking soda in hot water --
10dip each rope in baking soda water and drain on paper towels.
11form into pretzel shapes, place on greased sheets.
12bake at 400* for 15 minutes --
13combine 3/4 cup sugar and 1 tsp ground cinnamon, brush pretzels with the three tablespoons of butter and dip in cinnamon sugar mixture.
