I have always used all purpose flour for bread baking, and have never had a problem. If you know what your bread is supposed to feel like, you wont have a problem changing your type of flour.

Yes. But you have to be sure to either sift or very loosely measure with a spoon to avoid getting too much which will make your bread tough.

yes you can but I would sift it first.
