I am looking for recipes for potato meat. I love baked potato skins but...?!

Twice baked potato's. I love twice baked potato's.
You can make fried potatos or hash browns with the inside.Cream of potato soup or even potato casserole.

twice baked potatoes kicked up a notch.
after baking, scoop out spuds, leaving a layer of potato for strength. brush skins inside & out with cooking oil & return to oven another 20 minutes or so til golden.
to the potatoes in the bowl add a bit of soft butter, sour cream, chopped green onion, crumbled crispy cooked bacon & cheddar cheese.(salt & pepper if desired) mix it all together then fill the cooled shells. put back in oven for 10 to 20 mins to heat up.
make extra as they dissapear really fast!!!!

It makes good "stuffing" if done good, and stored in the fridge like you would a tub of chicken salad or tunafish salad (I just became very hungry, damn you...)...
Like stuffed Bell Peppers, potato tortillas (for the Ginger Kids who have the taste buds of a soap dish), it can be used as (and I know this sounds repetitive, but...Chip Dip...if you get it to be "spreadable," just look at it like you would mashed fish fish and/or chicken and mayo...
...but it's just "potato" based spread...I wouldn't go so far as to suggest a sandwich...but I have known Barbarian Friends in the past who would not hesitate to "blaspheme" the "Oh Holy Mosche Potato" substance by putting it between two slices of bleached flour, nutritionless white bread...
