pineapple chicke stir-fry
Ingredients
1 (6 ounce)can pineapple juice
1 tablespoon reduced sodium soy sauce
2 tablespoons brown sugar
1 tablespoon cornstarch
2 tablespoons olive oil
1 green pepper
1 (20 ounce)can pineapple chunks
2 tablespoons water
1 teaspoon minced garlic cloves
2 chicken breasts
Directions
1Cut Chicken Breasts into Bite Sized Chunks.
2Chop up green pepper into bite sized pieces.
3In a wok, sauté pan, or a deep frying pan heat two tablespoons of Olive Oil on Medium Heat.
4While the Oil is heating up combine the next 4 ingredients in a small bowl and set aside.
5Toss in Chicken pieces and garlic, stirring and tossing them frequently as they cook.
6Remove Chicken pieces once they are completely cooked and set aside.
7Toss in green pepper and cook for about a minute. Add half a tablespoon of oil to the pan if necessary.
8Add two tablespoons of water and cover the pan, opening it to toss the peppers around now and then.
9Once the peppers are tender toss the chicken back in with them, along with the can of pineapple chunks and its juice. Add the Pineapple Juice/Soy Sauce Mixture and stir all the ingredients together.
10Allow stir fry to cook another ten minutes, tossing occasionally, until the sauce is thickened.
11Serve with rice.

and soy sauce served with rice
sweetcorn, brocolli, green beans, mushroom, carrott, pepper, onion, pumpkin seeds, chicken or prawns and some nice noodles all stir fried either in water or oil. if in water then add half a cube of veg stock which adds a nice flavour. or use a nice sauce specially for stirfrys from the supermarket. or you could add some fresh garlic...very tasty!
I make a stir fry from mixed fresh peppers,onions, mushrooms, tomatoes,canned sweetcorn, and sliced and diced spam. this is very filling.
dice, slice, and julienne all the veggies you like: peppers, onions, mushrooms, etc and some sort of meat. anything will do. stirfry it til gently done.
I like it with plum sauce and rice!!
This is how we make the stir fry in our house:
- Fry chicken breasts
- Fry a small onion, any colour bell pepper and as many mushrooms as you like
- Steam carrots, bean sprouts, broccoli (or cauliflower, your choice) and snow peas
- Add the steamed veggies to the fried onion and bell peppers (Sometimes we even add corn or peas frozen, by the time it gets to our plate, the steam from the rest of the veggies cooks them)
*At this point you can add soya sauce, plum sauce or any sauce for that matter (whatever you prefer), let the flavours encorporate then add the chicken (we usually cut in strips)
- Serve with rice

Bung everything in a hot pan and fry until cooked.
i love to cook,and the key to a good stir fry are fresh ingredients and sliced the same width and length,so regarding that,slice the following equally...1 medium onion,1 green pepper,2 large flat mushrooms,1 carrot,add a handful of beansprouts per person,drain and slice a can of water chestnuts,a handful of baby corn,a handful of mange tou,and 1 chicken breast stripped...fry quickly in a very hot wok or a frying pan,with sum light oil,add 2 cloves chopped garlic,half a cm of chopped ginger,as much soy as you like and fresh chopped red chilli to your liking also...this will serve 2 ,add more for more people..
Stir Fry is fun! I do all kinds of things... So... lets start with the basics.
You can basically use whatever vegetables you find in your fridge. I always like to have something that involves carrots, broccoli, and Green/red Peppers. And depending on what I have I may use Fresh Green Beans (Not the canned kind), Water Chestnuts, Asparagus, Italian Green beans (again also fresh), and Baby Corn.
Meat wise, my favorite is Shrimp. But I also use Chicken alot. And Beef I use sometimes.
Seasoning wise, with shrimp or Chicken i usually use a blend that involves Paprika, Coriander, Garlic, Parsley, Onion, Salt, and Black Pepercorn. Sometimes I use another mix that involves Rosemary, Tried Tomato, Onion, Garlic, Red Pepper, Black Peppercorn, and Sea Salt.
With Beef I use Soy Sauce, maybe a little sugar (But I don't like it that much), Seseme Seed Oil, Garlic, and Black Peppercorn.
Also.. Stir fry goes well on Rice..

Pami's Pepper Steak Stir Fry
Beef/Pork Asian Low Fat Dinner

This is a versatile recipe that can go from Chinese, to Southwestern, to Hawiian. I just created it today and hope that you will enjoy it as much as my husband and I did. Bon Appetite.
45 Minutes to Prepare and Cook
Ingredients
8-10 oz beef roundsteak
1 Lg. bell pepper
1 small red bell (optional)
1 med. white onion
28 oz. can of La Choy Chop Suey vegetables
Sm. can of waterchestnut slices
2 oz. peanuts (optional)
2/3 tsp.Mrs. Dash chipolte herbal seasoning
1 tsp. garlic salt or to taste
1tbsp. virgin olive oil
Directions
Cut your meat to desired portions. Mine were about an inch maybe an inch and a half.
Place the meat in the olive oil in a large skillet that has a cover. Turn the heat on mediim high to high.
As the meat begins to brown chop your pepper(s) and onion and toss them in the skillet, stir it up well. Add your seasonings and stir again.
Put in the Chop Suey veggies and the waterchestnuts and peanuts, stir and cover, reduce heat to simmer. If you were able to chop and add all the ingredients within 10 to 15 minutes, the meal will be ready in about 10 minutes after you put on the cover and reduce the heat. You want your peppers tender-crisp.
Notation: Sauce can be added, but I prefer it plain to keep it low in calories. Yummy and inexpensive!
