Anyone have a good creamy jalapeno dip recipe?!


Question: Ingredients:
1 1/2 cup ranch dressing
1/2 cup sour cream
1/4 cup roasted green chilies -- canned is fine
1/4 cup sliced jalapenos -- canned
4 tablespoons fresh cilantro leaves
1/2 teaspoon salt
1/2 teaspoon garlic
1/2 teaspoon lemon juice -- or, to taste
1/2 whole roma tomato -- optional, diced

Pulse all ingredients in a blender in batches until smooth. Chill and use as needed.

I use Chipotle peppers which are canned smoke jalapenos.

Start by making a pesto with one 7 oz can of chipotles, one teaspoon granulated garlic and enough Red Hot to make a smooth paste in a blender. Mix about 1-3 teaspoons into 1/2 pound of sour cream and let sit for a few hours. Add in some chopped canned jalapenos if you want more color or texture. Also works with cream cheese.

I use the pesto mixed with black beans for a dip two. A can of beans in the blender with a teaspoon or two is a very quick and easy dip. I usually make the pesto and make the bean dip from what I can't scrape out of the blender. It seems to keep for a long time in the fridge from the vinegar in the red hot.

You can also add the pesto to wing sauce to bump it up a notch, but be careful-- it is very hot just by itself.

Serves 3-4

2 cups oaxacan cheese
1/5 cup diced jalapenos
1/5 cup diced tomato
1/5 cup olives

Melt cheese on low heat, throw in tomatos, jalapenos, olives before cheese is melted. Mix. Remove from heat when melted. Serve with tortilla chips.
