Does anybody have a recipe for potato candy?!
Answers: My mom made it a few times when we were little. I remember it being really sweet and even as a kid you didn't eat too much.
This is the recipe my father taught me to make. It's one of the most delicious candys I know.
1 medium baked potato, cooled
1 bag powdered sugar
peanut butter
Peel and mash the potato very fine. add powered sugar a little at a time, mashing it throughly into the potato with each addition. Do not be alarmed if it turns very soupy at first, it will stiffen up as you add more powdered sugar. When you have added enough powdered sugar to make a fairly stiff dough, dust a clean countertop or large cutting board with powdered sugar, turn the dough onto it, and roll out to roughly 1/4" thickness. Spread peanut butter on top, and roll like a cinnamon roll. cut into 1/4" thick slices and place on a plate. If your kitchen is warm, you may need to put the roll into the fridge for a few minutes before it will cut nicely.

BOIL POTATO WITH OUT REMOVING NY THING. SEE THATIT IS A BIT HARD ENOUGH
WHILE WATER IS MID BOILING PUT SUGAR ONE AND A HALF CUPS 4 1/2 WATER. LET SYRRUP IS MADE ,REMOVE TOP THIN COVER FROM POTATO
SEE THE SHAPE AROUND HALF A PLANTAIN SIZE
AND THEM PUT THEM IN THE SYRRUP .
LEAVE IT.WHEN BECOMES COL EAT 4 OR 5 PIECES A

Mashed Potato Candy
3/4 c Mashed potato; cold
4 c Coconut; shredded
4 c Confectioners sugar
1 1/2 ts Vanilla
1/2 ts Salt
4 oz Baking chocolate
Instructions:
Mix potatoes plain mashed (no butter,milk or salt added) and confectioners
sugar. Stir in coconut, vanilla and salt. Blend well. Press into one large
or two small pans, so that candy is about 1/2 inch thick. Melt chocolate in
double boiler, on low heat, do not allow water to boil. Pour over top of
candy and cool in refrigerator. Cut in Bite size squares.
