Question: I've been wanting to make vegan mayonnaise but I don't think i have the right ingredients and I have no idea how to make it.
So I need a simple recipe that won't take long.
All I have is:

Vegan Mayonnaise Recipe

2-1/4 cups safflower oil
1 cup soy milk
1 tablespoon maple syrup or agave nectar
3/4 teaspoon sea salt, or to taste
2 to 2-1/2 teaspoons apple cider vinegar, raw or lemon juice, fresh squeezed
1/2 teaspoon Dijon mustard

Makes 3-1/2 Cups

Combine all ingredients except vinegar or lemon juice in blender, blending until smooth. Slowly add vinegar or lemon juice until liquid thickens.

Only recipe I know...

Ingredients
1 cup soymilk
2 1/2 cups safflower oil
1 1/2 tablespoons cider vinegar
1/4 teaspoon dry mustard
1 tablespoon agave nectar
1 dash hot sauce
1 tablespoon sea salt
fresh ground black pepper
Directions
1place the soy milk in a blender, and with the belnder still running, slowly drizzle in the oil.
2Continue adding the oil until it is all absorbed.
3Transfer to a large bowl, and whisk in the vinegar, mustard, agave nectar, hot sauce, salt and pepper to taste.
4the mayo will keep in the refrigerator, covered, for up to a week.

I lied, I found another one...

Vegan Mayonnaise Substitute (Egg and Dairy Free)
1/2 cup of soy milk
1/4 teaspoon mustard
2 teaspoons of lemon juice
Dash of salt
1/4 teaspoon of paprika
6 teaspoons of vegetable oil

Combine the soy milk, mustard, lemon juice, salt, and paprika in a blender. Use a low setting and do not over mix. Slowly add the oil, one drop at a time. This will cause the mixture to thicken. Once all the ingredients have been added, mix until a smooth texture is achieved. As with regular mayonnaise, keep it refrigerated.
Makes about 3/4 cup.

3 tbsp lemon juice
1/2 cup soy milk
1/4 tsp salt
1/4 tsp paprika
1/4 tsp mustard
6 tbsp vegetable oil

I have bought some for my Mom, it is a little spendy and I ordered it online at www.healthyheartmarket.com I've alse seen a smaller container of the same thing at health food stores. Sorry I don't have a recipe, but my Mom did like the store bought stuff.

A good thing to put mayo on other than the normal sandwuches, pasta and potato salads is corn on the cob. I mix about 50/50 butter and mayo. I'm sure you could use/find a vegan butter or maybe even use a little olive oil. Good luck.
