Have you heard of a salad like this?!


Question: My boss had this made for her at a Mexican restaurant and I got one like it accidentally. Shredded cabbage, tomatoes, cilantro, shredded carrots, fresh avocado, lime squeezed over it. Anyone heard of this and if so, what else could I be missing? I want to make it tonight :-)

Yes, its a cabbage based citrus salad and usually used as a topping on foods like Taquitos Tapatios.

If you like you could sprinkle some paprika/all purpose seasoning...it really tops it off well.

Mexican foods are delicious and very filling.

Sounds like Mexican Coleslaw to me...you can add or take out whatever you would like to make this slaw...

Mexican Coleslaw
Makes 16 servings

3 medium, very ripe tomatoes, seeded and coarsely chopped
3 roasted red bell peppers, coarsely chopped
1/4 cup red wine vinegar - 2/3 cup olive oil
1/2 tsp. salt - 1/4 cup sugar
1 tsp. hot pepper sauce - 2 large garlic cloves
1 large head green cabbage, thinly shredded
1 carrot shredded
1 green bell pepper, chopped
1 medium onion, very thinly sliced
5 stalks celery, thinly sliced diagonally

In the bowl of a food processor fitted w/ steel chopping blade, combine the
first 8 ingredients. Process until tomatoes and peppers are coarsely pureed.
Combine the cabbage, pepper, onion, and celery in a large bowl. Pour the
dressing over the vegetables and toss. Cover and refrigerate for 4 hours
before serving. Note: You can add more hot sauce if you like it hotter.

sounds good, I'd like some ranch on mine....oh, maybe some cheese, I like that creamy cheese they use on taquitoes sometimes.

Don't forget a little chopped cilantro in these recipes!
