Anyone guess to a recipe for the mexican gumbo at qdoba?!


Question: I am so much in love with it....but I'm totally clueless in the kitchen....

as a cajun im offended by this recipe for two reasons...

#1 Gumbo is a Cajun/Creole dish and therefore there can't really be a Mexican gumbo

#2 Gumbo is taken from the African word Kigombo which means Okra...therefore unless theres okra in it...it aint gumbo...anyway...have a good one!!!

VOODOO QUICK CHICKEN GUMBO

2 (14 1/2 oz.) can Mexican style tomatoes (chopped) 1/2 green pepper, chopped 1 tsp. to 1 tbsp. Worcestershire sauce 1 tsp. salt 1/2 tsp. black pepper 2 cloves garlic, pressed 1/2 c. rice, uncooked 2 c. chicken broth 2 c. water 1 c. or more chicken, chopped Spices (all optional) : cumin, paprika, chili powder (all to taste)
If you don't like a hot gumbo, substitute one or two cans of stewed tomatoes for the Mexican type.

You may add 1/2 to 1 chopped jalapeno pepper if you like that.

Combine all ingredients in a heavy 4-quart stainless steel pan after spraying with non-stick cooking spray. Bring to a boil and simmer, stirring often while cooking, from 30-40 minutes. You can add or delete a lot of the ingredients. Have it your way!
