Melting Cheese?!


Question: Whats the best way to melt those block cheese? i have colby and sharp cheddar and i want to melt them so i can make some good nacho cheese.
P.s i only have regular pots and pans. i do not own those chocolate melters u see on tv

3 Tbs Butter or marg
2 tbs flour
1 cup milk
1-2 cups grated or cubed cheese

melt butter in pan...add flour and cook for about a min.stirring///slowly add milk...it should begin to thicken,,,add cheese 1/2 cup at a time stirring until it reaches the proper cheesiness to suit you....

the best way is to buy a fondue pot!!

A double boiler would work but I think you need to add some other ingredients.

Get velveta chesses then on the back has directions to how long to put it in for nacho chesses

The one with the higher fat content will melt better. (probably the sharp cheddar.
Make you sauce and remove from heat, stir in grated cheese until amalgamated.
You may need to return the pot to the heat from time to time, to add a little more heat to help the cheese to melt.

get the pot real hot and add 1/4 cup cold whole milk when it starts to boil add the cheese in chunks and stir constantly until melted. you'll have to play with it a little to get the consistency that you want. but you have to keep stirring or it'll burn on the bottom.

Cut cheese block into cubes. (any kind, or mix- half of each.)

Use a pot that you know won't make the food stick.

Add a small amount of milk and heat (on stove or microwave).

Add cheese cubes a few at a time, stirring frequently until melted.

You can add dices tomato and chiles (or 'Rotel' in a can, without the juice).

Shredding it will make it easier to melt and you can just stir it into a little beer or chicken broth and add salsa and hot peppers to it. You don't have to have a special pot. You can do it in a regular pot on the stove, just use a low setting. You might want to add a little flour to the cheese before stirring it into the hot liquid. This helps it from separating.

Make a rox and use low heat. Cheddar and Colby cheeese will turn into a mess iunless it has something to bind them together and keep them form falling apart.

I'd use a double boiler and break the large chunks of cheese into smaller chunks to help melt faster. Consider adding a little milk.

Other ingredients you might like....chili powder,pimentos,jalapenos,green chilies, precooked hamburger,garlic, cumin, onions, Tabasco, picante sauce.

Either shred or cut into 1/2 inch cubes. For a great nacho cheese sauce, melt 4 tablespoons butter and saute 1 chopped onion in it until caramelized. Add 4 tablespoons of flour and cook for 2-3 minutes over medium heat. Add 2 cups milk and 1 pound of cheddar cheese, stirring frequently until cheese is melted (about 15 minutes).

cut up cheese into cubes or shred. add a little liquid (milk or beer) add a sprinkle of flour, some worcestershire, a can of rotel, some cajun seasoning, melt it all together in your pot.
