We have BBQ at least once a week (bonus is that it doesn't smell up the house)
Put some mesquite chips on the bbq ..... Lightly coat the salmon with olive oil, and sprinkle with Creole seasoning and lots of dried dillweed. BBQ 5-8 min on each side, or until flaky. Serve with this sauce: 1/2 c. mayonnaise, 1/2 c. sour cream, LOTS of dried dillweed - all mixed together

You can't go wrong with salmon, grilled, baked, poached, steamed, it's even easy to cure at home into that stuff that can cost $16/lb! (see: http://en.wikipedia.org/wiki/Gravlax)
For quick, easy and very tasty, try this!
Take a nice fillet of salmon and your sharpest knife. Slice it into thin medallions. (Shoot for 1/4"). Lay your knife at a slight angle and be sure to cut AWAY from the fingers, plz!
Brush lightly with oil (very lightly) and season with just a little salt and pepper.
Heat your heavy skillet up VERY hot and whip these little pieces in, 4 or 5 at a time, turning them after about 30 seconds (really!). They will get just a little color, be delightfully crisp around the edges, and perfectly cooked in the center.
If they start to fall apart on you, you're waiting too long to turn/remove OR turn the heat down just a touch.
If you're feeding 4-5 people, a warm plate in the oven makes the perfect 'holding' place.
Serve with a little salad your favorite sides and a nice, cold white wine.

salmon is really forgiving, so you can cook it most any way. I like it best pan fried with my favorite spices, lemon and olive oil.
Here's a great recipe:
Ingredients
3 tablespoons maple syrup
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
1 1/2 teaspoons cornstarch , dissolved in
1 tablespoon water
4 salmon fillets
1 scallion , sliced thin (white part plus about 2-3 inches of the green)
1 tablespoon toasted sliced almonds (optional)
Directions
In a small bowl whisk together the syrup through cornstarch solution until smooth.
Place the fillets skin-side-down in a shallow baking pan.
Pour the syrup mixture over the salmon.
Bake about 15-18 minutes at 450°F until the fish flakes easily; baste with glaze halfway through cooking.
Sprinkle with scallion and almonds before serving.
my favorite way of eating salmon is to cook in on a pan on the stove in olive oil and shake some garlic salt on it. i eat it with a salad or steamed veggies.

1 1/2 lbs salmon steaks or salmon fillets
Marinade ingredients
2 tablespoons lemon juice
3 garlic cloves , minced
1 teaspoon salt
3 tablespoons olive oil
1 teaspoon pepper
3 teaspoons cajun seasoning
Directions
1. Mix all marinade ingredients and pour over salmon. Marinate for 1 hour. Place fillets over medium hot coals.
2. Grill for 3 to 4 minutes on each side.
