Your BEST MEATLOAF and gravy RECIPE???!


Question: I am making meatloaf tonight. Besides making it my mom's way, which was ok but not great,(Sorry mom) I don't have a recipe. I need how to know how to make a gravy with the pan drippings too, please.

1st lemme tell u about the gravy.
My hsbnd always makes ours; its really good.
I believe he uses cold water, & mixes the water to the flour, "slowly" out of the pan. No lumps and all. adds it in slowly, over slow heat, til soft boil, then turns it down to a simmer. add salt & pepper to taste. It'll b done in a minute or 2 or 3. Can't help ya any more on the gravy Q. sorry.

amounts of meat & spices
depend on how big a meatloaf ur making.
My meatloaf I add breakfast sausage to it.
ratio 2 lbs hambrgr 1 lb sausage.
1 box stove top stuffing, soak it in 1 C. of milk
worchesershire sauce, 2 eggs, onion, garlic, & paprika;
also use the seasoning from the stuffing box.
salt & pepper to taste, if u want.
My hsbnd likes the Ketchup coating on top of it.

First of all never use pan drippings from a meatloaf..it is pure fat from the hamburger. What I use is a mix of beef broth and tomato soup and add some seasoning. My fav seasoning is a pinch of cayenne and some McCormicks Steak seasoning. One of the best recipes I have found was Paula Deen's Cheeseburger Meatloaf recipe from Food Network. But seriously. Don't use pan drippings from meatloaf unless you don't care about your cholesterol and fat count.

i don't have a recipe...i just use what ever i find in the fridge but i do use a mixture of ground pork and beef from publix which works really well

Honey, they others are right. The gravy from the cooked meatloaf is awful. I do like a gravy on my meatloaf though. Here is one I use often
Good Eats Meat Loaf
Recipe courtesy of Alton Brown


6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken
3 whole cloves garlic
1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg
For the glaze:
1/2 cup catsup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey


Heat oven to 325 degrees F.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.

Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.

Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

I use 1/2 lb of sausage to a lb or 1/1/2 lb of hamburger. use crackers--soda, ritz, potatoe chips ,crushed in my recipe. put 1/2 of meatloaf mix in a pan top with mixed vegetables, corn , or what vegetable. then the other half of meat add cheese in layer and top if you like. Different cheeses and vegies , give different tastes and meals . As for pan drippings for gravy -- like one said Not from meatloaf too greasy!!! but othr meat dripping add some flour and stir . add water to make gravy.
If you want gravy for meatloaf use jarred gravy, packaged, or I made gravy out of dried onion soup mix and thickend it with flour or cornstarch.

my meatloaf is an Italian style,
simple and delicious
ground beef, pork and veal(equal portions
1 egg per pound of meat,
1 tsp salt , 1/2 tsp pepper,
1 1/2 tsp. of each oregano, basil
1/2 cup bread crumbs per pound of meat
sprinkle of parsley if you have it.
1/2 cup grated Romano or Parmesan cheese
mix all ingredients well and form into a long log.
use a covered roasting pan.
pour 1/3 of 1 can of whole tomatoes(broken up) on the bottom of pan
place the meat log on top
pour the rest of the tomato plus 1 small tin of tomato paste on top, mix the two well
sprinkle the top with 1/2 tsp of oregano and basil
sprinkle 1/4 tsp of garlic powder(not salt) or add 2 crushed cloves of garlic to the tomato mix.
throw in 2 bay leaves
cover with lid and bake at 325 degrees for
1 lb meat 1 hr
2 lbs 1 hr 30 min
once ever 30 min, baster the top with the juice and replace the lid and let continue baking.
This is a wonderful old recipe that tastes great..
the tomato mix can be used on mashed potatoes, or noodles,
I usually serve with a green tossed salad and a green vegetable....

This is easy and delicious.

1 Lb. Ground Chuck
3/4 Cup Italian Bread Crumbs
3 Eggs
1/2 med. onion- chopped fine
1/2 green pepper- chopped fine
1 Cup milk (you may need to add a tad more)
1 tsp. garlic salt.
4 TBS. Ketchup
2 Tsps. Mustard

Mix all ingriedients together. Place in cassarole dish. (spread out till about 1 1/2 inches thick). Bake at 350 for
40 minutes then remove from oven and spoon off any grease.
Thinly baste the top of meatloaf with ketchup (it "carmelizes" and adds to the flavor of the meatloaf) and bake for another 15 minutes or so.

This meatloaf is so good it doesn't need gravy. Makes excellent sandwiches the next day too. I like to serve it with
homemade mashed potatos and early peas.
