Who the hell puts pork in green chili? When did this start?!

What's wrong with pork in green chili? Chili isn't an indigenous food to my family but every recipe I've seen calls for pork and in fact, I see Chili Verde and Green chili pork stew used interchangeably for similar recipes.

Pork has always been an ingredient in a true green chile sauce. By true I mean no the stuff bought in the jar, but made form anaheim or New Mexican Green chile. It is added for flavor: like using chicken stock instead of water. Now this does put some people off, especially in an age where eating meat is a bad thing (still don't get that one), so a lot of mas produced chile sauce, as well as restaurants will not use pork to be polically correct, or respond to dietary concerns of all.

Yeah, I know - what people call "chili" these days is enough to make a real cowboy's boots rot. Traditional mexican green chili has chicken in it, not pork. And as you know, red chili has beef. But y'know, pulled pork in barbecue sauce is a pretty dang good dinner in it's own right. If you can find an outlet for Dinosaur Barbecue Sauce, try some of that. Dinosaur Barbecue is a biker's bar and restaurant here in Syracuse, New York, and the flavor is to kill for! They're marketing several varieties of BBQ sauce, and I am having the time of my life deciding which is best. They're all so damn good I may never decide!

I don't think I've ever had green chili, but all I've ever put in any kind of chili is beef.
