Dinner Recipes???????!


Question: I want to make a nice dinner for my fiancee this weekend, and dont know what to make him. What is some of your guys favorite dinner recipes. He does not like pork or steak but loves hamburger and chicken. i want a main dish and a side dish. any recipes you can give me would be great or any links thank you.

***Get Yo Man Chicken***

2 tablespoons olive oil
6 chicken thighs, skinless
1 teaspoons salt
1/2 teaspoons pepper
1 medium onion, sliced
1 cup chicken stock
1/2 cup white wine
1 (14.5-ounce) can crushed tomatoes in thick puree
1 teaspoon dried thyme
1/2 tablespoon dried rosemary
1 tablespoon lemon-pepper
Hot buttered rice
2 tablespoons chopped fresh parsley leaves
Heat the oil in a 12-inch skillet over medium-high heat.
Pat chicken dry with a paper towel and season with salt and pepper. Brown the chicken, meat-side down first, and turning once, about 4 minutes on each side. Transfer to a plate to reserve.

Pour off all but 1 tablespoon of oil from the pan.

Add onion to the pan and saute until tender, roughly 3 minutes. Add the stock and wine and stir, scrapping any brown bits off the bottom of the pan. Turn heat to high and reduce by half, about 3 minutes. Pour in the crushed tomatoes and add the dried herbs and lemon pepper. Add the chicken thighs back in. Cover and cook on medium low for 40 minutes.

Remove chicken from liquid and serve on hot buttered rice. Ladle the sauce on top and garnish with fresh chopped parsley.

I have tried the chicken and the corn, but not the other two recipes. The chicken recipe is truly delish! And everyone I know that I've made it for, loves it! =] The recipe calls for chicken thighs, but I used bone, skin on chicken breasts and they worked great too!

Meatloaf

INGREDIENTS
2 tablespoon butter
1 onion, chopped
1 small green bell pepper, chopped
3 cloves garlic, minced
1 pound ground beef
15 saltine crackers, crushed
16 ounces shredded Cheddar cheese
1 (1.25 ounce) package taco seasoning mix

DIRECTIONS
In a medium skillet, melt butter over medium heat. Add garlic, onion, and green pepper and saute until onions are soft.
Preheat oven to 375 degrees F (190 degrees C).
In a large mixing bowl, place ground beef, crushed crackers, Cheddar cheese, taco seasoning, and sauteed onion and green pepper. Mix thoroughly.
Press beef mixture into a 9x5 inch loaf pan. Bake in a preheated oven for 45 to 55 minutes or until done. Check with a meat thermometer for doneness. Internal temperature should read 165 degrees F (74 degrees C)

chicken parm with a nice green salad and garlic bread is easy. just flatten the chicken breasts, bread and fry them; cover the chicken with sauce and parmesan and provolone cheese, place in the oven until the chesse melts, serve with pasta, a nice green salad and garlic bread.

#1. ~Forty Clove Garlic Chicken~
Ingredients:
# 1 (2 1/2 lb) chicken , cut up
# salt
# 2 teaspoons cooking oil
# 40 cloves garlic , unpeeled
# 1/2 cup dry white wine
# 1 small lemon , quartered
# ground red pepper

Directions:
1. Sprinkle the chicken lightly with salt.
2. Cook the chicken on all sides in hot oil until browned.
3. Arrange the chicken in a baking dish.
4. Add unpeeled garlic cloves and wine to the chicken.
5. Squeeze lemon quarters over the chicken; adding
the squeezed quarters to the dish.
6. Lightly sprinkle ground red pepper over the chicken.
7. Cover and bake in a 325 degree oven for about 1
hour or until chicken is tender.
8. Transfer chicken and garlic to a serving platter,
discarding lemon.
9. Spoon cooking liquid over chicken and garlic.
10. To eat garlic, squeeze the unpeeled clove between
your thumb and finger until the clove pops out of its
peel and into your mouth.

#2. ~Crock Pot Hamburger Casserole~
Ingredients:
# 1 lb hamburger
# 1/2 head cabbage , chopped
# 2 (14 ounce)cans stewed tomatoes
# salt
# pepper
# 1 (4 ounce)box macaroni

Directions:
1. Cook hamburger; drain.
2. Layer hamburger and cabbage into the crock pot.
3. Pour tomatoes over layers.
4. Cook until cabbage is tender (1-2 hours).
5. Cook noodles and pour over mixture, then cook 30
minutes longer.
