Looking for any recipies using last night's already cooked rice...Thanx!?!
1-2 green onions
2 large eggs
1 teaspoon salt
pepper to taste
4 tablespoons oil for stir-frying....maybe a little more
4 cups cold cooked rice...use what you have on hand
1-2 tablespoons soy sauce
Wash and finely chop green onions
Lightly beat eggs with salt and pepper
Heat a large fry pan or wok and add 2 tablespoons of oil. When the oils is hot, add the eggs and cook until scrambled.Remove eggs and clean out the pan.
Add 2 tablespoons of oil, add the rice and stir-fry for a few minutes, using a spoon to break the rice apart.
Stir in the soy sauce, when the rice is heated through, add the scrambled eggs back into the pan. Mix thoroughly. Stir in the green onions, and serve hot.
If you have any meat. shrimp, you could finely slice and add to the stir fried rice.....

cook up some ground beef and add it to the rice
Egg fried rice!
Fry an onion, add rice, make an omlette, roll up and shred finely add to rice and onion mixture season with soy sauce. You can add other cooked veg too such as mushrooms or peas throw in some shredded cooked chicken or meat of your choice, add a bit of garlic or spice and you've got a pilaff. Make sure you reheat it properly, get it really hot as nasty bugs can found in cooked rice
make a casserole. just put the rice on the bottom of a glass baking dish. then spread over it either pre-cooked broccoli or asparagus or even some cooked chicken breast pieces. then mix together a can of cream of mushroom soup with some sour cream or even just some milk so that it's not so thick (not to runny either, like a thick batter). Pour that over top, cover with shredded cheese and bake. Yum!
Make a stir fry.
Remove Veg and meat from pan.
Add rice to pan.
Warm the irce in the pan while it absorbs the leftover juices from the stirfry.
Sounds like dinner to me.
Make goulash without noodles and serve over the rice. Basic goulash, ground beef, browned, chopped onions, stewed tomatoes, beef bouillon, salt, pepper, serve over the rice.
Make stuffed bell peppers.
turn it into spanish style rice by adding some salsa to it (with some cut up chicken breast in it would be good too)
Reheat it with a can of vegetable soup. This is a good way to beef up a can of soup. Also, could make spanish rice, heat with some salsa.
Fried Rice is always a good alternative or a hot dish.
Our favorite is to fry some hamburger, and combine with rice and a can of cream of mushroom soup as a hotdish type meal. Yum!
Carmel Rice Pudding
Ingredients
3 cups cooked white rice
1/2 cup raisins
1 teaspoon vanilla
1 (14 ounce)can sweetened condensed milk
1 (12 ounce)can evaporated milk
1 tablespoon sugar
1 teaspoon ground cinnamon
Directions
Spray inside of 2- to 3 1/2-quart slow cooker with cooking spray.
Mix all ingredients except sugar and cinnamon in cooker.
Cover and cook on low heat setting 3 to 4 hours or until liquid is absorbed.
Stir pudding occasionally.
Sprinkle with sugar and cinnamon.
Serve warm.
