What is a good mac and cheese recipe?!

oh this one is perfect:

INGREDIENTS

* 1 (8 ounce) package elbow macaroni
* 1 (8 ounce) package shredded sharp Cheddar cheese
* 1 (12 ounce) container small curd cottage cheese
* 1 (8 ounce) container sour cream
* 1/4 cup grated Parmesan cheese
* salt and pepper to taste
* 1 cup dry bread crumbs
* 1/4 cup butter, melted

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain.
2. In 9x13 inch baking dish, stir together macaroni, shredded Cheddar cheese, cottage cheese, sour cream, Parmesan cheese, salt and pepper. In a small bowl, mix together bread crumbs and melted butter. Sprinkle topping over macaroni mixture.
3. Bake 30 to 35 minutes, or until top is golden.

I don't have the recipe with me, but I have been using the one in the Betty Crocker cookbook for years, and my family just loves it! (I use extra sharp cheddar, no other cheeses) Only thing I do extra is to put some panko bread crumgs mixed in a little melted butter on top, to add a little crunch!

They just had a comfort foods contest on foodnetwork.com recently and the winner made a french onion soup macaroni & cheese that added the french onion soup carmelized onion mix to homemade mac & cheese that had gruyere and some other cheeses and a crumb topping that looks soooo good!

I am thinking to myself - why not a box of velveeta mac & cheese and a packet of french onion soup mix? Lazy, I know, but...

What I DO like to do with macaroni & cheese mixes is make them up; pan fry some kielbalsa with onions & garlic and add to the mac & cheese with defrosted cooked chopped brocoli. Mmmmm! Gotta have the garlic with this tho. :)

For casseroles, look at shepherds pie recipes. I recently took some ideas from foodnetwork.com and made my own that I think is killer. Basically hamburger meat with steak seasoning, layer of frozen corn, then make a roux with flour & butter & beef broth & red wine and some thinly sliced red onions poured over. Mashed potatoes with blue cheese, cream or half & half, little butter on top. Baked. Oooo! It's excellent!
