I think Risotto alla Milanese is a good option - it's fairly easy to make and comes out great at long as you pay attention and choose good quality ingredients.

Risotto is traditionally served on its own in Italy, as a primo (first course), not along a meat dish as it is often done in the US, so I would just focus on making a great Risotto!

A few tips:
- choose a good extra-virgin olive oil to sautee the onions
- use dried Porchini mushrooms, not boletus or other - it really does make a difference
- use powdered saffron, which is easier to dose than strands and gives more color and flavor

Make an osso buco and remember the fresh lemon zest at the end. It'l be great. serve with a classic risoto milanese... if you can get porcini mushrooms.

tiramisu is a fav in my family.. :)



Ingredients: Filling

ESPRESSO, OR TRIPLE-STRENGTH COFFEE, 1/2 cup, room temperature
SUGAR, 1/2 cup
BRANDY, 1/4 cup
EGG YOLKS, 2
MASCARPONE CHEESE, 1 pound
LADY FINGERS, 1/2-pound package
SEMISWEET CHOCOLATE, 4 ounces shaved
Ingredients: Icing

WHIPPING CREAM, fresh, 1 cup
VANILLA, 1/4 teaspoon
POWDERED SUGAR, 2 tablespoons
Ingredients: Garnishes

COCOA POWDER, for dusting
SHAVED CHOCOLATE
Directions

Line the inside of a loaf pan with large sheet wax paper.
Stir espresso, sugar and brandy in mixing bowl until sugar dissolves. Reserve 1/3 cup.
Whisk egg yolks into this, and add the cheese. Whisk until smooth.
One at a time, soak ladyfingers in reserved coffee (don't oversoak). Place crosswise in pan, trimming if necessary to layer bottom completely..
Spread on half of cheese mixture, then half of shaved chocolate.
Repeat with ladyfingers, then remaining cheese, then rest of chocolate.
Cover with remaining ladyfingers.
Bring up flaps of wax paper, Wrap pan in plastic wrap and refrigerate 6 hours.
When serving, invert pan on serving platter, tapping bottom to remove "loaf." Remove paper.
Whip whipping cream, vanilla and powdered sugar together until stiff. Spread over the "loaf."
Dust with shaved chocolate.

Get a can of Spaghetti-Os. Put in on a plate. They'll never know the difference.

Go to the Food Network website, search for sausage and peppers by Giada. Great easy recipe that everyone loves. Good luck!

Cook Penne. It's a kind of pasta. After it's baked, add pepper, and in the serving bowl use Classico Four Cheese. It's awesome! And bay leaves add flavor. Use some sort of herb to mix around as well. Oregano, Parsley, Basil, etc.

Unfortunaely, I can't name Italian desserts except Gelato, but Gelato is EXTREMELY fattening.

This is a dish we make for weddings and can be served hot or cold. Cook your bowtie pasta according to the instructions on the package. Dice scallions, red bell peppers and artichoke hearts. Add the veggies to the hot or cooled pasta. Dress with a lemon viniagrette and serve parmesan cheese on the side. You can add to this dish by cooking boneless chicken breasts that are cooked and then dressed with the lemon viniagrette that are then thinly sliced to the pasta.
