Whats easy that i can make for supper?!
Grilled Mozzarella Chicken Sandwiches
1/2 C. sliced onions
1/2 C. green pepper strips
1 tbsp. oil
4 small chicken breasts (or however many people there are)
1/3 C. BBQ Sauce
4 slices mozzarella cheese (I acutally didn't use the cheese)
4 Ciabatta rolls (I got mine from a bread store)
Preheat grill to medium-high heat. (I used my George Foreman grill) Cook and stir onions and peppers in hot oil in large skillet on medium heat 5 min. or until tender; cover. Set aside, keep warm.
Grill chicken 8 minutes; turn over. Brush with BBQ sauce. Grill an additional 7-9 minutes or until chicken is cooked through, turning occasionally and brushing with the remaining BBQ sauce.
Fill rolls with chicken; top with cheese slices, onions and peppers. (I toasted my rolls in the pan that I made my onions and green peppers in)
I served this with simple Granny Smith Apple slices. It was soo good and not terribly filling! I would say it took my like 25 minutes in all to make this!

TORTELLINI SOUP
1 tb olive oil
2 med ribs celery diced
2 med carrots diced
1 med-lg onion diced
4 cloves garlic, finely chopped
3 cans fat free chicken broth 14 oz each
1 pkg (9 oz) refrigerated tortellini (your choice)
we like tomato or chicken pruscuito tortellini
the 3-cheese is good too
1 can 19 oz cannelini beans, rinsed
1 bag 6oz baby spinach
? tsp nutmeg
? tsp pepper
salt to taste
Heat oil in 4 qt saucepan over med low heaat. Stir in celery, carrot,onion and garlic, cover and cook 10 minutes until soft. Add broth and 2 cups water.
Bring to boil, stir in tortellini and simmer as package directs. Stir in remaining ingredients, heat through. Sprinkle the soup with finely shredded parmesan cheese and accompany with crusty Italian bread.
This is a low fat and heart smart recipe and one of our favorite soups ever!

EASY BAKED CHICKEN DINNER
4-8 chicken breasts, bone in or boneless
1 can cream of celery soup
1 c. brown rice (UNCLE BEN'S? whole brown rice)
1 pkg. frozen mixed vegetables
In a serving baking dish lay defrosted chicken pieces side by side.
Spread 1 can of cream of celery soup over chicken. Cover with foil and bake at 350 degrees in oven for one hour. One the stove prepare rice and vegetables as directed. Serve all 3 items on each plate using chicken cream for gravy as requested.
Serves 4-8.

One-Pan Roasted Pork Supper
2 medium sweet potatoes, peeled, cubed
1 large red onion, cut into thin wedges
1/2 cup KRAFT LIGHT DONE RIGHT! CATALINA Reduced Fat Dressing
1 1/2 teaspoons dried thyme leaves, divided
1 (6 ounce) package STOVE TOP Stuffing Mix for Chicken
1 1/2 cups water
2 (12 ounce) small pork tenderloins
instructions:
Preheat oven to 375 degrees F. Toss sweet potatoes and onion with dressing and 1/2 tsp. of the thyme. Arrange in single layer on 15x10x1-inch baking sheet sprayed with cooking spray. Bake 10 min.
Meanwhile, combine stuffing mix and water. Cut each tenderloin diagonally into thirds. Push vegetable mixture to edges of baking sheet. Spoon stuffing down center of baking sheet; top with pork. Sprinkle remaining 1 tsp. thyme over pork.
Bake 45 to 50 min. or until internal temperature of pork reaches 160 degrees F.
Yield: 6 servings

mac n cheese
if your not looking for something fancy or terribly healthy lol, I always do soup and sandwhiches when I need a quick easy dinner! take your favorite sandwhich meats,cheeses and veggies, put in between bread, spread mayo on the outside of the bread( i find that the mayo makes the bread crisper than butter) and grill in a pan over medium heat until golden brown. another way is to beat a few eggs and dip the sandwhich in that instead of mayo, and then grill. serve with your fav can of soup! EASY!
microwave corndogs and easy mac
This is my hubby's concoction, and I thought it looked and sounded gross at first, but it's really good.
2 cans of tuna, drained
2 cans cream of mushroom soup
3/4 soup can of milk
1/4 pound of Velveeta, cubed
Heat all that up until the cheese has melted. Then add...
A handful of frozen peas
Garlic powder
Pepper
When everything's hot, serve on toast.
Burritos
Flour tortillas
Ground Beef
2 cans of ranch style beans
lettuce
tomato
avacado
cilantro (optional)
diced onion (optional)
cheddar cheese
Cook the groud beef, drain, add the ranch style beans and let that mixture simmer for a couple of minutes. Heat the tortillas in the microwave and then assemble
Take a flour tortilla> put in some beef/bean mixture and then put what ever you like in it from the above ingredients. Roll it up and eat it. Omit what you don't like. An easy dinner made in 15 minutes with easy clean-up.
You can make this recipe ahead of time and it is great for leftovers. The cheeses are kind of exotic, so I use cheddar, fontina, mozzerella, and parmesean. Just use the cheeses that you like and have on hand.
Baked Four-Cheese Spaghetti
ACTIVE TIME: 30 MIN
TOTAL TIME: 1 HR 10 MIN
SERVES: 8
ingredients
? 1 1/2 pounds spaghetti
? 1/2 pound imported Fontina, coarsely shredded (2 cups)
? 1/2 pound mozzarella, coarsely shredded (2 cups)
? 1/2 pound Gruyère, coarsely shredded (2 cups)
? 1/4 pound Gorgonzola dolce, crumbled
? Salt and freshly ground pepper
directions
1. Preheat the oven to 350°. Lightly butter a 9-by-13-inch baking dish. Cook the spaghetti in a large pot of boiling salted water until al dente. Drain well and spread the spaghetti on a baking sheet; let cool.
2. In a large bowl, toss the Fontina with the mozzarella and Gruyère. Spread one third of the spaghetti in the prepared baking dish in an even layer. Sprinkle 1/3 of the mixed cheeses and half of the Gorgonzola over the spaghetti and season with salt and pepper. Repeat with another layer of spaghetti, mixed cheeses, Gorgonzola and salt and pepper. Top with the remaining spaghetti and mixed cheeses.
3. Bake the spaghetti in the center of the oven until the top is golden brown, about 40 minutes. Let cool slightly before cutting into squares and serving.
MAKE AHEAD The recipe can be prepared through Step 2 early in the day and covered with plastic wrap. Uncover the dish before baking.

You will need:
hamburger meat
cream of mushroom soup.....I use the biggest can they sell
milk
diced onion
diced bell pepper
diced celery
salt, pepper, garlic
in a large skillet, brown, with onion and drain the hamburger, season to taste. add the soup and about 3/4 can of milk, add the bell pepper and celery, mix well...simmer until it thickens and the vegetables have cooked.
I serve on toasted hamburger, bun, rice, toast...my family loves this...and so easy! It has such a rice flavor......
A box of pasta, tomatoe, some mayo and tuna. Tuna pasta salad.
