You are cooking it entirely to long. That's why it's so dry. When i bake chicken I use season salt (love it on like everything) and pepper and i put water in the pan (i also thaw it out before cooking..sit it in hot water about 5 min later its all thawed out). I've never had it be dry this way and I only cook it for about 20-25 minutes at 400.
Grilled chicken is good as hell, but same as your baking.. If you overcook it, it will be tough and dry.
Buy or make a marinade and cook it on the grill. Pound your chicken first.
The really only way to get better flavor is fresh chicken. Checking the temp for doneness 165deg F
OO I do this all the time...
buy Shake and Bake. It is delicious and keeps the chicken nice and moist!! It only takes around a half hour in the oven! Its SOO delicious!
Try it and let me know! :)
when i cook my chicken in the oven i remove all the fat and skin and i get a fork and prick it all over then add a few rashes of unsalted back bacon at the last 25 minutes of cooking time, but before i cook it i add hot water to the tray and baste it with the water, i never add any lard, oil etc .
cooking it while its frozen is part of the reason its dry...thaw it out before hand if you can....and drop the cooking time to 25-30 mins....the olive oil and garlic sounds good....
I'd say you're probably overcooking it. Are you cooking it straight from the freezer, or thawing it first?
Thawed chicken breasts (single breasts, no bone, no skin) bake in about 20-25 minutes at 400, and broil or grill in around 12 minutes. While there's some variation for size and thickness, I suspect your chicken is dry because you're cooking all the water out of it.
If you're cooking chicken breasts, boneless skinless, you might be cooking it too long. Breasts are really easy to dry out.
Ok... first off, buy the fresh chicken because in the end result it 100% tastes alot better...Second GRILL IT! chicken tastes alot better when you grill it, and alot of times it savors the juices inside.
1 more thing you can try is to do what i do, somewhere during the end of the actual cooking process get some lemons (Around 2-3 lemons) and cut them in half and squeeze all the juice unto the chicken. this promises a tasty and juicy chicken!! Good Luck!
Marinating your chicken first is good, but you don't have to buy a marinade. A marinade should be a mixture of a vegetable oil, an acid, and spices. Depends on what you like. I always use extra virgin olive oil with meat. In fact, a lot of times, I just coat the meat with it, sprinkle on spices, and cook.
A marinade could be many combinations, such as:
oil; vinegar; garlic; basil
oil; lemon juice; rosemary
oil; orange juice; mint
Also, when you bake, keep the temp to 325 degrees rather than the standard 350. If you're cooking with skin, always put skin on top so it self-bastes, and always cover meat. I wouldn't broil afterward, it will just dry it out.
Hope this helps.
Looks like you're cooking it too long and making it dry out. Fresh chicken will not have lost lots of the moisture. I'd cut baking time to 1/2 hour and broiling to brown it to 15 minutes max. Use a meat thermometer inserted into the thickest part of the breast and follow guidelines for temps. Let it rest when you take it out of the oven so that the juices can be reabsorbed and not lost as soon as you cut into the chicken.

your overcooking your chicken.
i suggest you cook it for less time.. 30-35 minutes on a 350 degree oven
Also you should cover the chicken either with the cover that goes with the baking dish or aluminum foil..
I wouldnt use oil, i would put a half cup of water in the bottom of the pan . when cooking this will allow the chicken to absorb the water because covering it will be like steaming it..
using garlic over the breast is a good idea. add a little sat and pepper as well
ive never had chicken breast get dry when i covered them and added water..good luck..
A--Defrost the chicken first.
B--Let the cooked chicken "rest" for 10 minutes before serving--i.e., remove from heat and leave loosely covered (just tent a piece of foil over it). This allows the juices to redistribute after cooking. Do this to all the meat you cook, it will be much be much juicier!
