i have a couple of friends coming around for tea next week, and everyone loves my slow cooker meals...however the budget is really really tight, what are some good ideas for cheap cheap meals?

First, look at the ads in the local paper for grocery stores. Pick a meat, etc. that is on sale. That always helps. Here are some recipes with few ingredients so they shouldn't be to expensive. Hope this helps!

Easy Creamy Chicken

6-8 boneless, skinless chicken breasts
1 can cream of chicken soup
1-3oz package cream cheese
1-8oz carton sour cream
3-4 green onions, chopped

Place chicken in 9x13 dish. Sprinkle with salt, pepper, and good seasoned salt. In saucepan, combine soup, cream cheese and sour cream on low heat just until cheese melts and ingredients mix well. Pour mixture over chicken, sprinkle green onions on top. Cover, bake at 300 for 1 hour. Uncover and bake another 15 minutes. Serve over noodles or rice.

Nacho Chicken

6-8 chicken breasts (or 8-10 chicken thighs)
2 cans nacho cheese soup
? cup milk
3 tbsp worchestershire sauce

Place chicken in large baking pan. Sprinkle with salt, pepper, and a spicy seasoned salt. Combine soup, milk, and worchestershire sauce in saucepan until just heated through. Cover and bake at 350 for 1 hour.

Cheesy Pepper Steak

1 ? pound sirloin steak, cut in strips
Seasoned salt
1-16oz pkg. frozen bell pepper and onion strips, thawed
1-16oz pkg. cubed Mexican processed cheese

Sprinkle steak with seasoned salt. Coat large skillet with non-stick vegetable spray and cook steak strips for 10 minutes or until no longer pink. Remove steak from skillet and set aside. Stir in vegetables and ? cup water and simmer for 5 minutes or until all liquid cooks out. Add cheese and turn heat to low. When cheese melts, stir in steak until heated through and serve over hot cooked rice.










Tangy Spareribs

5-6 pounds spareribs
1-6oz can frozen orange juice concentrate, thawed
2 tsp Worcestershire sauce
? tsp garlic powder
Spicy seasoned salt
Pepper

Place spareribs in shallow baking pan, meat side down and sprinkle with salt, pepper, and seasoned salt. Roast at 375 for 30 minutes. Turn ribs, roast another 15 minutes and drain off fat. Combine orange juice, Worcestershire and garlic powder and brush mixture on ribs. Reduce heat to 300. Cover ribs, roast 2 hours or until tender and baste occasionally.

Quick Chicken Casserole

3 cups cooked, chopped chicken or turkey
1-16oz. package frozen broccoli florets, thawed
1-10oz. can cream of chicken soup with ? cup milk
2/3 cup mayonnaise
1 cup shredded cheddar cheese
Salt and pepper
1 ? cups crushed cheese crackers

Combine chicken, broccoli, soup, mayo, and cheese, salt and pepper to taste. Mix well. Pour into buttered casserole dish and spread cheese crackers over top. Bake uncovered at 350 for 40 minutes or until bubbly.

Crock Pot Beef Stroganoff

1 (2 1/2 pound) beef chuck roast

2 cans cream of mushroom soup

1 package dry onion soup mix

1 1/3 c. water

(Add 1/2 c. extra sliced mushrooms and/or onions if desired!)

Extra-wide egg noodles (cooked and drained just before serving time)

You can brown all sides of the roast in a large pot with a bit of oil if desired, but it's not necessary.

In a small bowl, stir together the soup and onion soup mix. Place roast in crock pot (along with mushrooms and/or onions if desired), and cover with soup mixture. Cook on low for 8-10 hours.

With a large wooden spoon, stir the finished roast a bit before serving, the meat will shred apart and mix in with the gravy. Serve warm over bowls of extra-wide egg noodles.

Store leftover beef stroganoff in fridge for up to 1 week, or freeze (without the noodles) for later use (within 6 months).

Gone-all-day Casserole Crockpot Recipe


1 cup uncooked wild rice, rinsed and drained
1 cup chopped celery
1 cup chopped carrots
2 cans (4 oz each) mushroom stems and pieces, drained
1 large onion, chopped
1 garlic clove, minced
1/2 cup slivered almonds
3 beef bouillon cubes
2-1/2 teaspoons seasoned salt
2 pounds boneless round steak, cut into 1-inch cubes
3 cups water

Place ingredients in a crockpot in the order listed (do not stir). Cover and cook on low for 6-8 hours or until rice is tender. Stir before serving.
Makes 12 servings

4 skinless, boneless chicken breast halves
2 tablespoons butter
2 (10.75 ounce) cans condensed cream of chicken soup
1 onion, finely diced
2 (10 ounce) packages refrigerated biscuit dough, torn into pieces



DIRECTIONS
Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

Ok...you want cheap...I'll give ya cheap BUT good slow cooker recipes:

1. Red Beans & Rice: This classic dish was made by & for people who were low on money. Rumor has it..that people would get paid on Friday and burn through it on Saturday & Sunday. So, by the time Monday came around all they could afford is: Red Beans & Rice

Ingredients
3 cups water
1 cup dried red kidney beans
1 cup chopped onion
1 cup chopped green bell pepper
3/4 cup chopped celery
1 teaspoon dried thyme
1 teaspoon paprika
3/4 teaspoon ground red pepper
1/2 teaspoon black pepper
1/2 (14-ounce) package turkey, pork, and beef smoked sausage, thinly sliced (such as Healthy Choice)
1 bay leaf
5 garlic cloves, minced
1/2 teaspoon salt
3 cups hot cooked long-grain rice
1/4 cup chopped green onions

Preparation
Combine first 12 ingredients in an electric slow cooker. Cover with lid; cook on high heat for 5 hours. Discard bay leaf; stir in salt. Serve over rice; sprinkle servings evenly with green onions. Yield 4 servings (serving size: 1 cup bean mixture, 3/4 cup rice, and 1 tablespoon green onions)

2. Hearty Chicken & Rice Soup (Rice is even cheaper than noodles...you get more for your $)

Step 1:Go to your local grocery store. Buy 1-2 pkgs. of chicken bones: neck & back (if you don't see any prepackaged ask the butcher if they have any). The reason is that you can make some great tasting and very inexpensive chicken broth from the bones rather than buying the cans of Swanson chicken broth. They should be very cheap. Next buy 1 small package of chicken breasts 2-4. Buy 2 large carrots, 1 large white onion, 1 small bunch of celery, 1 head of garlic and 1 small bag of white rice.

Step 2: On the morning of your dinner party, place the chicken bones in the crock pot with enough water to almost reach the top of the crockpot. Add in about 1 T. of salt. Cook on HIGH for about 5-6 hrs. Then, remove all of the bones. Turn the setting on LOW. Skim off any fat from the broth. In a different pot, cook up the bag of rice and set it aside. Do not refrigerate the rice. Leave at room temp.

Step 3: About 1 hr. before your guests arrive, turn up the setting to HIGH. To the hot broth add in the chicken breasts (thinly sliced), carrots (diced to a 1 in. cube), chopped onion, 1-2 minced garlic and celery slices. After 1 hr. goes by, add in some of the rice (as much as you can but leave it "soupy"), stir up throughly, season to taste. Serve shortly after.
