My friends all really like my pasta and red sauce. I like to make the sauce sweeter and robust, with lots of herbs and a little pepperyness. I tend to keep it veggie too; usually just diced tomatoes and onions. I love it.
As for an exact recipe, I'm afraid I haven't got one to share. When I'm cooking a meal I usually have the preconcieved notion of a theme and I run with it. The spices and sauces I use and make, the dishes and sides I choose, they all are made with a specific taste in mind. I spice and flavor the food I'm cooking lightly, adding more as I go, tasting often. Tasting is the only way to ensure the food you're cooking is the flavor you desire. And when making a dish a second time, experiment; take it in another direction.
People tend to forget that before food was a lousy microwaved burger wrapped in wax paper, it was art. Food is art, so make it your own.

:::Chicken Tortilla Soup:::
Yummy Mexican chicken soup that is super easy, just dump the ingredients in the crock pot and let it cook! It is delicious!
2-4 cans chicken stock (depending on desired thickness, personal preference)
2 cans crushed tomatoes
1 can diced tomatoes (can use another can of crushed if you don't like chunks or vice versa)
1 can whole corn kernels
1 can black beans
1 small can green chilies (optional to taste)
1 14-oz can enchilada sauce
1 small onion (diced)
2-3 cloves of garlic (minced)
2 tablespoons fresh cilantro
3 teaspoons cumin
3 teaspoons chili powder
Salt and Pepper to taste
1.5 lb. chicken (cut into pieces and cooked, I use breasts, but any meat will do, sometimes I use leftover meat from a whole chicken and just shred it up... whatever I have on hand really. Sometimes I even make it with beef!)
Optional Garnishes: sour cream, cheddar cheese, avocados and tortilla strips.
I just dump all of this in the slow-cooker and let it go for a few hours, sometimes I need to add a little extra chicken stock, depending on how thick it is...
For a great garnish, you could use store bought tortilla chips, but I like to make my own tortilla strips, and it is super easy! You need: 1 pkg. flour tortillas, and a few tablespoons of veg. oil. Just brush both sides of the tortillas with the veg. oil and cut into thin strips. Place strips on a cookie sheet and bake at 400 degrees for 7-8 minutes, turning them halfway through. They are crispy and delish in the soup!

Dean’s Spaghetti Sauce
2 - 28 ounce cans tomato puree
2 - 18 ounce cans tomato paste
32 ounces water (approximately, add more or less to your thickness preference)
2 tbls minced garlic
2-3 bay leaves
1 tbls dried basil
1 tbls dried parsley
1 tbls dried oregano
? tsp dried thyme
? tsp dried sage
Mix all ingredients in a 5 quart Dutch oven; bring to a boil, stirring constantly. Reduce heat, cover and simmer over very low heat several hours for flavors to meld, stirring occasionally. Do not let it boil too rapidly. Since tomato products seem to vary in sweetness, a couple teaspoons of sugar can be added if a little extra sweetness is desired.

PIZZA DOUGH:
1 1/2 CUP FLOUR
1CUP OF WARM WATER
2TBS SALT
2TBS SUGAR
1 PACKAGE OF YEAST(ONE PALM FULL)
PIZZA SAUCE:
DRIED BASIL(PALM FULL)
TOMATO PASTE (SMALL CAN)
CHOPPED GARLIC AND ONION
MIX ALL DOUGH INGREDIENTS. IT SHOULD BE STICKY. COVER WITH A DAMP CLOTH FOR THIRTY MINUTES. THEN ROLL OUT DOUGH. THEN ADD SAUCE AND CHEESE. COOK FOR 25-30 MINUTES IN A GREASED PIE PLATE. BON APPETITE

I'm queen of substantial, creative appetizers. The one that gets the biggest raves is a super easy and super delicious cajun-style shrimp. I always bring a few copies of the recipe wherever I bring this dish (popping it in the oven on site). Invariably I get requests for it.
I use half creole and half cajun seasoning. It's important that one of your seasoning blends is salt free, or find a cajun seasoning that isn't super salty. It's just too much salt using 2 tbs of some of those mixes.
I use frozen, raw peeled shrimp. Just thaw them under cold running water and you're ready to go. Serve with slices of good, crusty french bread. Dipping in the spicy blend of shrimp juice and olive oil is a must.

1/2 cup olive oil
2 tablespoons Cajun or Creole seasoning
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
1 tablespoon honey
1 tablespoon soy sauce
Pinch of cayenne pepper
1 pound uncooked large shrimp, shelled, deveined
Lemon wedges
French bread
Preparation
Combine first 7 ingredients in 9x13-inch baking dish. Add shrimp and toss to coat. Refrigerate 1 hour.
Preheat oven to 450°F. Bake until shrimp are cooked through, stirring occasionally, about 10 minutes. Garnish with lemon wedges and serve shrimp with French bread.

Chocohotopots Recipe
1 stick plus 1 tablespoon unsalted butter
4 ounces semisweet chocolate, with 60 percent cocoa solids
2 eggs
3/4 cup superfine sugar
3 tablespoons all-purpose flour
Special equipment: 4 (2/3 to 1-cup capacity) ramekins
Directions:
Place a baking sheet in the oven and preheat to 400 degrees F.
Butter the ramekins with 1 tablespoon butter.
Either in a microwave or in a bowl suspended over a pan over simmering water, melt the dark chocolate and 1 stick butter, then set aside to cool a little.
In another bowl, mix the eggs with the sugar and flour with a hand whisk and beat in the cooled butter and chocolate mixture. Divide the mixture between the 4 buttered ramekins. Bake for about 20 minutes, by which time the tops will be cooked and cracked and the chocolate gooey underneath.
Place each ramekin on a small plate with a teaspoon and serve. Make sure to warn people that these desserts will be HOT!
Chicken with sour cream gravy and it takes 1 1/2 hours to make and tastes like it took all day. Desert nut and raisin rolls, rum cake and thirteen layer chocolate cake. Depends on who wants them.
