Your favorite recipe for boneless chicken breast filets?!
Thanks!
Answers: Please share. I know there a ton out there, but would like to know personal favorites. My husband felt compelled to buy a huge sack of them, and I'd like to use some before they become a permanent part of my freezer ;p
Thanks!
My Sister just sent this to me 2 days ago and I made it up that night....Wow it was easy and so delicious.....
4 Chicken breasts
Spray a baking pan with oil. Lay in the rinsed Chicken breasts Turn on the oven to 350 deg.
1 half lemon Squeezed over the chicken breasts. If you have Lemon Pepper sprinkle some of that on top of the chicken. And shove that in the oven to cook....
Meanwhile....
In small bowl :
1/4 cup soft BUTTER...no substitutions (margarines wont work...nor will canola spreads) That is what the recipe stated
1/2 cup Parmesan Cheese. (I used the solid block and grated it..you can use the regular Kraft Parmesan in the Green container)
3 tbl Mayonnaise (I would not use Miracle Whip here)
5 Green Onions Chopped fine including the green parts (tops) (all of a green onion is useable cept the roots)
1/4 tsp salt or to taste..I omitted this as the Parmesan is salty enough
Pepper to taste as well.......Hot sauce if you like it spicy or 3 shakes of Tabasco for some zing...
Mix this up and let set while the Chicken Cooks to done.
Then pile this on the Chicken Breasts evenly spreading out to cover...about 1/4" thick on the sauce per breast.
Broil for about 3 minutes to just heat the sauce and lightly brown it. This is by eye...may take longer by a couple minutes depending on your broiler. May take less time too...
This is very good....would also be good to serve for company.
This does need a broiler to brown quickly and melt the cheese to bring up the flavor as the chicken is already done and you don't want to dry it out. ENJOY...
4-5 pieces (frozen is ok) in to a baking dish, with a can of coconut milk, and some curry powder. If you want you can add some celery, carrots, potatoes, and add enough stock to cover it. Bake at 350 1-1/2 hours or until chicken is done. Serve over rice.
garlic lovers chicken
Everyone in my house loves it except my 4 yo who is super picky
PARMESAN CHICKEN
4 boneless skinless breast filets of chicken
1/3 c. Dijon mustard
1/2 c. seasoned bread crumbs
1/3 c. butter, melted
1/2 c. grated Parmesan cheese
Pound chicken breasts flat. Pass through mixture of mustard and butter. Dredge in mixture of crumbs and cheese. Bake for 20 to 25 minutes at 375 degrees in rectangular sprayed Pyrex dish.
Put some chopped onions into a small wok. Once theyve browned add some of your chopped chicken. Also add some curry paste mixed with water. Let it simmer but don't boil it because the chicken will go rubbery. There you go! Chicken Curry [english style]
Fry up small pieces of chicken with rice, egg, carrots, bean sprouts and peas. Yum!
Stuffed chicken brest usually makes chicken in my house disappear pretty fast. Not to mention it's pretty easy to make.
I just make one box of stove top, roll a little stuffing in each fillet using a toothpick to keep them closed (if you feel like it) putting them in a casserole dish then combining one or two cans of cream of mushroom and milk and pouring over the stuffed fillets. Cover or none bake until chiken is done.

LEMON CHICKEN
Brown chicken breasts in a pan with some olive oil, garlic powder and chopped onions. Combine in baking pan and cut up about 2 cleaned lemons into quarters and squeeze the juice onto the breasts. Set the lemon husks into the pan and bake on 375 for about 45 minutes to one hour. It doesn't taste overly-lemony, but they are super juicy and have a great flavor.
SALSA CHICKEN
Once again, brown chicken breasts in a pan with olive oil and chopped onions. Put in a baking pan and cover with 1 can of diced tomatoes and half a jar of salsa (I like to use Herdez, it's my favorite, and nicely spicy, but any brand will do). Stir everything around so that the breasts have a good covering, and bake for about 45 minutes at 375. After 45 minutes, I take out the chicken, cover the breasts with cheese (I usually use Colby Jack, but mexican-seasoned cheese is great, too), add more salsa, and put back in for another 15 minutes. Cut up some cilantro and sprinkle on top of the chicken after it's done. Serve with a side of spanish rice, salsa, and sour cream.
Good luck!
i place the chicken breasts in a casserole dish and the in a different bowl i mix together a can of mushroom soup and 8oz of sour cream.
