Does anyone have a recipe for southern fried chicken coating?!

1 Teaspoon Onion Salt
2 teaspoons Celery Salt
2 teaspoons Ground Ginger
1 Teaspoon Pepper
1 Teaspoon Ground Sage
1 Tablespoon Paprika

PREPARATION:

Combine all ingredients in a small bowl and blend well. Spoon mixture into a small airtight container and label as Chicken Coating Mix. Store in a cool dry place and use within 6 months.

ok this is what i do,

first soak the chicken in buttermilk overnight
then the next day when your ready to fry, put flour, salt, and pepper, into a ziploc bag, then put a couple peices of chicken in there with it, zip it up and shake it. then fry it.

i think this recpie is good.

Well, there are as many as there are Southern cooks, just about, but my granny always soaked the chicken in buttermilk overnight. Then she set up three pie plates: one with plain flour, one with beaten eggs and one with seasoned flour (salt, pepper and a little cayenne). She dredged the chicken in the plain flour first, then the egg, then the seasoned flour. She always, always fried in a cast iron skillet. Oh, let the chicken come to room temp in the buttermilk before you start the process...it stays juicier that way.

I still make it this way, and in the same skillet, too.

BTW: the first flour dredging is to make the egg stick to the chicken.

flour, very fine cracker crumbs, salt, pepper, garlic, cayenne pepper powder. Equal amounts of flour and cracker, then to taste on the others. Put a little baking powder in too. Mix all together. coat chicken in milk (buttermilk is best) then coat with dry and fry.

True Southern fried chicken doesn't need all the fancy seasonings. Simply combine flour, salt, pepper, and garlic powder. Dip the chicken in buttermilk, and dredge in the flour mixture.

I like to salt and pepper my chicken and then it into a mix of 3/4 to 1 cup of Louisiana hot sauce and 2 beaten eggs. Then into flour. Then I let it rest for 5 minutes before frying. It's simple and delicious, but not too spicy.

oh try mine:
Fry Bake Chicken

1or 2 box of Jiffy Cornbread mix
1/2 cup seasonal mix
dash of black pepper

mix all well in a big bowl..set aside
another big bowl whip up 2 eggs and 1/2 cup of milk

Dip chicken in the egg mixture then roll into the cornbread mixture. place on grease pan. Do all ur chicken this way. Then turn oven on 350 degrees. Spray pam oil over ur chicken bake about 25 minutes. Bring out ur chicken and spray again then put back into the oven bake about 25 minutes longer. Bring out of oven and turn over easily and spray them again. bake another 30 minutes. Test to see if they r done. sometimes they may take longer.

U can do all this deep fry too and not have to turn the oven on.when I have a crowd that is the number one they all want me to cook!!

SOUTHERN FRIED CHICKEN

2 fryer chickens, cut up

BATTER:

2 eggs, beaten
2 tbsp. water
2 tbsp. grated cheese (Romano or Parmesan)

COATING MIX:

1 c. flavored bread crumbs
1/2 tsp. garlic powder
1/4 tsp. paprika
1/2 c. grated cheese
Salt and pepper to taste

Sprinkle chicken with salt and pepper and dredge in flour. Beat together 2 eggs, water, and 2 tablespoons cheese; set aside. Combine crumbs, garlic powder, paprika, grated cheese, salt, and pepper; mix together. Dip prepared chicken pieces into egg mixture and then into the crumb mixture and set on waxed paper.
In large skillet, heat 1/2 inch of oil. Start frying chicken pieces. Fry and turn chicken pieces until golden brown on all sides. Serve 6.

Southern Fried Chicken

1 tb + 1 tsp salt
2 ts Onion powder
1 1/2 ts Black pepper
1 1/2 ts Rubbed sage
1 ts White pepper
1 ts Thyme
1/2 ts Garlic powder

Instructions:

18 Boneless chicken breasts,
-skinned
2 c Flour
2 Eggs
2 c Milk
3 c Vegetable oil

In a small bowl, combine salt, onion powder, black pepper, sage, white
pepper, thyme and garlic powder to make the seasoning mix. Mix seasoning
ingredients well.
Sprinkle the seasoning on chicken and rub in. Seal chicken in a plastic
bag and refrigerate overnight, if possible.
Remove chicken from refrigerator at least 1 hour before cooking.
Place flour in a pie pan and set aside In a wide shallow bowl, beat eggs
and milk and set aside.
In a large deep skillet, heat oil to 375 degrees.
Just before frying, dredge chicken in flour, shake off excess.
Immediately place chicken in egg mixture and back into flour once again.
Place in hot oil in a single layer and fry until crisp before turning.
Turn only once.
