SLOW-COOKER TEX MEX CHICKEN

1 lb. boneless skinless chicken breasts, cut into 1-inch-wide strips
2 Tbsp. (1/2 of 1-1/4-oz. pkg.) Taco Seasoning Mix
2 Tbsp. flour
1 each: green and red pepper, cut into 1-inch-wide strips
1 cup frozen corn
1-1/2 cups Thick 'N Chunky Salsa
1 cup Mexican Style Shredded Four Cheese
TOSS chicken with seasoning and flour in slow cooker. Stir in all remaining ingredients except the shredded cheese; cover with lid.
COOK on LOW for 6 to 8 hours (or on HIGH for 3 to 4 hours).
STIR just before serving. Top with the shredded cheese.


Crock Pot Enchiladas
1 1/2 lb cooked chicken or browned hamburger meat
1 Can Cream of Mushroom Soup
1 Can Cream of Golden Mushroom
1 Can Cheddar Cheese Soup
1 Can Red Enchilada Sauce
1 Can (small) of green chilis
About 15 cut up corn tortillas.
Combine all ingredients and simmer. 4 hours on high or 8 hours on low. Add tortillas during the last hour.

Crock Pot Stuffed Bell Peppers
1 Pkg (about 7 oz) Spanish Rice Mix
1 pound ground beef
1/2 cup diced celery
1 small onion - chopped
1 egg, beaten
4 medium green bell peppers, halved lengthwise, cored & seeded
1 can (28 oz) whole peeled tomatoes, undrained
1 can (10 3/4 oz) condensed tomato soup, undiluted
1 cup water
Set aside seasoning packet from rice. Combine beef, rice mix, celery, onion and egg in large bowl.
Divide meat mixture evenly among pepper halves.
Pour tomatoes with juice into crock pot (slow cooker).
Arrange filled pepper halves on top of tomatoes. Combine tomato soup, water and reserved rice mix seasoning packet in medium bowl. Pour over peppers. Cover, cook on LOW 8 to 10 hours or HIGH 5-6 hours

Crock Pot Ranch Potatoes
2-24-oz. bags frozen hash browns, partially thawed
2-8-oz. pkgs. cream cheese
2 packets Ranch Dressing mix
2 cans cream of potato soup
Put potatoes in crockpot.
Mix remaining ingredients in a bowl,mix then add to potatoes.
Stir well.Cook on low 7-9 hours. Stir before serving.

Crock Pot Round Steak
1 large round steak
4 large carrots, sliced
4 large potatoes, sliced
1 can cream of mushroom soup
1/2 cup water
1 teaspoon lemon pepper
salt and pepper to taste
Cut round steak into serving slices. Sprinkle with lemon pepper on both sides. Put in crock pot and add other ingredients. Let simmer on low for 5 hours.


Pork & Gravy Crock Pot Style
4-5 pork shoulder chops
1 pkg. onion soup mix
1 can cream of chicken soup
10 oz. water
Trim excess fat off chops and cut into stew size pieces
Lightly brown in skillet and place in the bottom of crock-pot
Combine remaining ingredients and pour over pork. Cook 6 hours on low. Serve over garlic mashed potatoes.

Crock Pot Beef
2 lbs stew meat
1 can cream of mushroom soup
1 can golden cream of mushroom soup
1 pkg. onion soup mix
2 cans whole mushrooms or pieces
1/2 cup water
Cook in crock pot on low for 6-8 hours. Serve over hot rice



Pepper Steak (Crock Pot) I know this has a lot of items in it, but it is soooo good
2 lbs boneless beef chuck steaks
1 tablespoon olive oil
salt and pepper
1 teaspoon minced garlic
3 tablespoons flour
1 cup beef broth
1/2 cup teriyaki sauce
4 tablespoons worcestershire sauce
1/8 teaspoon red pepper flakes
1 yellow onion, sliced in rings
1 green pepper, julienned
1 red pepper, julienned
1 fresh tomato, diced
1 teaspoon brown sugar
Cut chuck steak into julienned strips, sprinkle lightly with salt and pepper and saute with the chopped garlic and pepper flakes in the tablespoon of olive oil until lightly browned.
Transfer the chuck steak to a large crock pot. Mix the 3 tablespoons of flour with the beef broth and pour on top of meat. Add the Teriyaki sauce, Worcestershire sauce, tomato and brown sugar. Stir well and cook on high for two hours. After two hours of cooking on high, add the onion and peppers, turn heat down to low and cook for an additional 1 1/2 hours. Serve over rice or buttered egg noodles.

Coke Chicken Crock Pot Style
1 whole chicken (1 1/2 - 2 lbs)
1 cup ketchup
1 large onion, thinly sliced
1 cup cola (Coke)
Salt and pepper chicken to taste.
Put chicken in crock, add onions, add cola and ketchup.
Cook on low 6-8 hours

Irish Stew
5 coking potatoes
2 carrot stalks
1 onion
1/12 lbs stewing beef
2 cans cream of mushroom soup
1package dry onion soup mix
Peel and cut potatoes into slightly bigger than bite size pieces.Peel carrots and cut into pieces, peel and quarter onion into eight pieces. Line bottom of crockpot with potatoes
Add carrots and onions. Add stewing beef. Add soup,
undeluted. Spread soup to cover meat. Add onion soup over top. Cook on high covered for 4 hours. Cook on low for last two hours.Do not stir during this time, mix once before serving.

Mac-n-Cheese (Crock Pot)
2 cups macaronni - cooked
1/2 stick butter
2 1/2 cups shredded cheddar cheese
1 can cheddar cheese soup
1/2 cup sour cream
1/2 tsp ground mustard
1/2 tsp salt
1/2 tsp pepper
1 cup milk
3 eggs - beaten
Cook the macaroni - leaving a little tough as it will continue to cook in the slow cooker. Add remaining ingredients to the slow cooker. Once macaronni is cooked add it to the slow cooker. Cook on low for 3 hours 30 minutes before serving add a little more shredded cheeese to top.

2 cans condensed cream of chicken soup
1/4 cup onion, finely diced
2 cups water
2 10 oz packages refrigerated biscuits
1 chicken bouillon cube


Combine all ingredients, except biscuits, in slow cooker. Cover and cook on low for 5 to 6 hours. 30 minutes before serving, tear biscuit dough into 1-inch pieces. Add to your slow cooker; stirring gently. Cover and cook on HIGH for an additional 30 minutes or until biscuits are fluffed up and cooked through

This isn't for a meal, but a quick snack/dip.

Velveeta cheese
cream cheese
ground beef
salsa or rotel

Melt and mix for an awesome cheese dip. You can use as much of any of the ingredients as you want to suit your personal taste.

I am a former chef and now eat mainly a vegetarian diet, but you can do almost anything in a crockpot, the first lady's recipe sounded tastey, what you do need to do is pre-brown the meat, but I make dishes with 3-5 ingredients and let them cook for the day while I am out, doing my on-line work, after you have got the pot simmering on high, drop the temp to low and let it go, not stirring or watching nessessary.

I just recently bought a new one it has 3 non-stick pots from 3 qt to 5 qt, and I make enough for my weekly evening meals sometime, I know eating the same thing can be a bit stale. But I make currys and other vegetarian dishes for my main and have a salad or veg on the side.

I make Asian, Indian, European and Latin influenced dishes, from cans or frozen, dried beans/lentils/grains even soya products for a meat replacement, anything that is stewed or braised is fine for the crockpot, chicken, pork, beef, lamb, smoked/cured meats (corned beef, cottage rolls and smoked pork shoulders, even ribs) even fish and seafood can be done, some things are not long cooking but can be added in stages.

Just look at the dishes you and your family like and see how you can adapt them for use with the crockpot, Spaghetti sauces, Chilis and other dishes that benefit from a long cooking are the best.

Start by making the base for your favorite spaghetti sauce. After it's cooked for a while in the crock pot, add a 32 oz can V8 juice (yes, odd sounding, I know) and break up your pasta and add it to the crock pot. The extra liquid will be absorbed by the spaghetti and the pasta will have lots more flavor. My family LOVES it!

When you say not a whole lot of ingredients, I empathize, I frequently have a restricted cupboard. But you should list some of what you do have, meat, beans, veggies etc. Here goes anyway:

Viv's Beef Stroganoff

2-3 lb stew beef, lamb or venison
2 bay leaves
2 cups flour
oil for pan
2 cubes beef bouillion
1 tbsp flour
2 cups water
salt and pepper
egg noodles, cooked and drained

Rinse beef and coat in flour. Heat oil in deep (preferrably cast iron) skillet (you want it to be pretty darn hot) and cook till about halfway done in batches. Don't worry about germs, this step is for browning purposes only and the beef will be fully cooked when consumed. Place partially cooked beef in crock pot on low heat.
W/the skillet still hot, add bouillion cubes, bay leaves and water, scraping the bottom of the pan to get all the crusty browned bits into what will be the gravy. Heat to a simmer, reduce liquid by half, season w/ salt and pepper and add flour, whisking constantly to keep from lumping or sticking. Pour gravy over beef in crock pot adding a bit more water & another bouillion cube if gravy doesn't cover the beef. Set on low for3-4 hours, till beef is tender and falling apart in the gravy. Serve over egg noodles with a side of your favorite vegetable (this was my favorite Sunday dinner my gramma used to make when I was a girl, we got the recipe from a woman from our church, guess what her name was).

My absolute two favorite Crock pot meals are Beef Stew

I brown my beef stew Cubes (season to your own special liking) For a thicker gravy, mix 1/2 cup of flour with 1/2 cup of cold water...stir well and add to meat once it's in the crock pot)

Add fresh diced carrots, celery, onions and potatoes.

Can't get much easier than that.


Pork Loin

Season and let loin marinate over night.
Next day, place loin in crock pot with onions, green peppers, and any other veggie of you choice,

I usally slice the loin up and serve with rice and or mash potatoes.
Yummy!

Crockpot Rib Dinner

Lay boneless country ribs in crock. Peel & quarter 4-6 potatoes--drain a can of whole kernel corn & spead on--slice 1 large or 2 small onions & lay the slices on top--pour a bottle of your favorite BBQ sauce over--cover & cook on LOW for 6-8 hours

Add a tossed salad & some good dinner rolls, & you are GOOD!!
