well, for something easy:
get pre-made flour tortillas; Shredded Sharp Cheddar Cheese.
pre-heat skillet (medium heat... I prefer the black iron for tortillas)
Spread butter/margarine on tortilla
Place buttered side of tortilla on skillet and cover half of the tortilla with cheese (and any other ingredients such as grilled vegetables or meat), fold tortilla covering cheese/ingredients.
Flip.
You can put two of these side by side, cut them with a pizza cutter, spread sour cream, cover with thick "chunky" picante sauce, add more shredded cheese of choice.
I use a different cheese for this "extended version", pepper jack is good.
You can place the setup in the oven, top rack, on broil, to bake the top.
PS. One trick in the heating of flour tortillas, is to watch for the "puffing up". Especially in pre-made ones. That is when you flip them. Puffs up on that side, and they are done.

It's easy! Lightly oil your frying pan and throw your tortilla in. On one side, start by adding cheese. Then, add your favorite toppings such as beans, grilled veggies or meats, then fold it over. Garnish with fresh toppings like lettuce, onion, sour cream and serve rice.

get some slices of chicken breasts grill them on a pan cut them into little squares, then make a 3 cheese quesadilla with flower tortillas and then add the chicken inside, some green sauce would be a nice touch.
Quick and easy. You can purchase chopped grilled chicken prepackaged. I pick up that, shredded cheese (whatever I'm in the mood for), medium flour tortillas, sour cream, salsa and guacamole.
Put cheese and a little chicken on the tortilla, microwave for 30- 45 seconds or until cheese is melted.
Serve with salsa, sour cream and guacamole.

I just put a smigen of oil, just wipe the bottom of the pan with it, take my flour tortillas, add some slices of pepper jack cheese, or a nice sharpe chedder, or both along with some left over chicken, steak, or whatever kind of meat you want. And put iin the skillet, cook on one side flip over cook a minute on the other side, and bamm you are good to go.
Avocado Quesadillas
1 Avocado; peeled, pitted,
And chopped
Juice from 1/2 fresh lemon
Salt; to taste
Freshly-ground black pepper;
-to taste
1 ts Chopped garlic
1/2 c Heavy cream
Combine all the ingredients in a food processor, fitted with a metal
blade. Puree until smooth. Season with salt and pepper. Serve
immediately. This recipe yields about 1 cup.
