Question: Ok, So my friend's Mom used to make this all the time, It's so Good.It's a Puerto Rican Dish.Does anyone has a good recipe to make Yellow Rice and Beans?

this is how i make mine im from puerto rico .
i can of pink or red beans (drianed)
2 really nice tbs of sofrito( goya you can get it at your local supermarket)
salt
1 can off tomato sauce the very small one
1 package of sazon sin achiote
1package of sazon con achiote
3 cups of medium grain rice
3 cups and 1/2 of water

mix evrything in your pot and on mediun high heat let it dry stir onece , then ad some oil to rice like 2 tabs, and stir. cover and put heat on meduim low, until fully cooked.

ingredients
? 3 tablespoons cooking oil
? 1 onion, chopped
? 2 cloves garlic, minced
? 1/4 teaspoon turmeric
? 1/2 teaspoon ground cumin
? 1 1/4 teaspoons salt
? 1/4 teaspoon fresh-ground black pepper
? 1 1/2 cups long-grain rice
? 2 3/4 cups water
? 1 bay leaf
? 1 2/3 cups drained and rinsed canned black beans (from one 15-ounce can)
? 1 green bell pepper, chopped
? 2 tomatoes, diced
? 1 tablespoon wine vinegar
? 1/4 cup chopped fresh parsley
? 1 lime, quartered, for serving (optional)
directions
1. In a medium saucepan, heat 2 tablespoons of the oil over moderately low heat. Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Stir in the garlic, turmeric, cumin, 1 teaspoon of the salt, the black pepper, and rice. Cook, stirring frequently, for 2 minutes.
2. Add the water and bay leaf; bring to a simmer. Reduce the heat to low and cook, covered, until all the liquid is absorbed and the rice is done, about 20 minutes. Remove the bay leaf.
3. In a large glass or stainless-steel bowl, combine the rice, beans, bell pepper, and tomatoes. Add the remaining 1 tablespoon oil and 1/4 teaspoon salt, the vinegar, and parsley. Toss gently to combine. Serve with lime wedges, if using.

BLACK BEANS AND YELLOW RICE

3 (15 oz.) cans black beans, drained
1 lg. onion, chopped
1 med.-size green pepper, chopped
2 cloves garlic, minced
1/4 c. olive oil
1 (14.5 oz.) can Cajun-style stewed tomatoes, undrained and chopped
1 1/2 c. water
1 (8 oz.) can tomato sauce
1 tbsp. red wine vinegar
1 tsp. sugar
1 tsp. pepper
1/2 tsp. salt
Hot cooked yellow rice
1/2 c. chopped green onions
Sour cream

Rinse beans; drain well and set aside.
Saute onion, green pepper, and garlic in olive oil in a Dutch oven until vegetables are tender. Add beans, stewed tomatoes, water, tomato sauce, vinegar, sugar, pepper, and salt; bring mixture to a boil. Cover, reduce heat, and simmer 1 hour. Uncover and simmer an additional 20 to 30 minutes, stirring occasionally.

Serve black beans over hot cooked yellow rice. Top each serving with chopped green onions and a dollop of sour cream. Yield: 6 to 8 servings

Rice and beans are staple foods in Latin Caribbean Food. This recipe combines yellow rice with pink beans, but you can make this recipe with any type of bean you like.

INGREDIENTS:
2 tablespoons olive oil
1/2 cup sofrito
1 packet sazón with annatto
salt to taste

1 15.5 oz can pink beans (drained and rinsed)
2 cups long-grain white rice
4 cups of water (or chicken broth)
PREPARATION:
1. Heat the olive oil in a pot over medium heat.
2. Add the sofrito and lightly fry for about one minute.

3. Add the sazón, salt, beans, and rice. Stir to combine the ingredients and coat the rice with color.

4.Pour in the water (or chicken broth) and bring to a rolling boil.
Allow to boil for one to two minutes, and then stir the rice mixture.
5. Reduce the heat to low and cover with a tight fitting lid that will not allow steam to escape. Do not lift the lid during the cooking time.

6. Cook on low for 30 minutes. Remove the lid, fluff the rice, and then cover again and let sit a few minutes before serving.

Servings: 4 one cup servings.

Easy Black Beans and Yellow Rice

Vegetable cooking spray
1/2 c Chopped onion
1/4 c Chopped celery
1/4 c Chopped green pepper
1 cn (15 oz) black beans; drained
1 cn (14.5 oz) whole tomatoes;
-Undrained & chopped
1 ts Sugar
3/4 ts Italian seasoning
1/4 ts Garlic powder
1/4 ts Pepper
1/8 ts Salt
1/8 ts Hot sauce
1/3 c Long grain white rice;
-Uncooked
1/4 ts Ground tumeric

Instructions:
Coat a medium saucepan with cooking spray, and place over medium-high heat
until hot. Add onion, celery and green pepper; cook, stirring constantly,
until tender. Stir in drained beans and next 7 ingredients; bring to a
boil. Reduce heat, and simmer, uncovered, 15 minutes or until thickened,
stirring frequently; set aside. Combine water, rice, and turmeric in a
saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes.
Remove rice from heat; let stand 5 minutes or until liquid is absorbed.
Serve black bean mixture over rice.
