Penne a la Arrabiata

Ingredients
3 tablespoons extra virgin olive oil
3 garlic cloves , crushed
1 (28 ounce)can diced tomatoes , in sauce
1 teaspoon crushed dried red chilies
2 teaspoons dried basil , more if using fresh
1 pinch black pepper
1 lb dry penne pasta
1/2 cup finely grated pecorino romano cheese , plus
extra finely grated pecorino romano cheese , for serving
Directions
1Put oil in a heavy saucepan over medium heat.
2Add garlic cook for 5 minutes until beginning to turn golden, careful not to burn.
3Turn down to medium low.
4Add chili and stir.
5Add Tomatoes and sauce and stir.
6Put a plenty of salted water on to boil in a big saucepan.
7Cook sauce for about 20 minutes stirring occasionally.
8Cook penne until al dente.
9Strain pasta.
10Push sauce through moulie or meshed strainer into saucepan with the back of a spoon getting as much through as you can.
11Heat and add 1/2 cup of pecorino cheese.
12Taste for seasoning.
13Add cooked penne and toss.
14Serve hot with extra pecorino cheese at the table.

Follow the instructions on how to cook the penne pasta (usually a big pot of water and add penne after the water has already been boiling for a few minutes. Wait until it boils again with the penne in it then reduce heat just a bit. Cook the penne for 8-11 minutes. After the penne has been cooked, drain in a colander.

You said you had a chance to buy the sauce, meaning it is in a jar/can already, right? So I can only assume you add the sauce after the pasta has finished cooking.

You can add basil, oregano, or whatever else to the dish, even cheese of your choice (romano, mozzerella, parmesan, what have you).

just cook the pasta and heat the sauce in a pan, very low heat.when the pasta is cooked to your liking -normally penne takes about 9 minutes ,drain and put in pan with sauce.add freshly grated parmesan cheese!!!
