Mac and cheese with limited ingredients?!


Question: I have cheddar cheese mild and sharp. Noodles. milk. butter. flour can i make a good home made mac and cheese. Oh i have 16 oz. of noodles. if thats enough. and together a pound of cheese.

You have everything you need. Maybe a bit of salt and pepper for flavor and you are good to go.

Boil the noodles.
Meanwhile make a roux with the butter and flour (about 2 Tbsp of each) then add the milk--2 cups if you have it. Cook it over medium heat until the milk thickens, wisk frequently to combine it well. Season with s/p and when thickened and just boiling stir in the cheese (2-3 cups depending on your cheesiness desire) until it melts. Pour over the cooked and drained noodles. Eat it as is or bake 20 minutes at 350. Enjoy.

look man all you have to do is cook the noodles, add a little butter 2-4tbsp, stir, add as much cheese as you want and a little milk for moisture then stir that. you could eat it like this or sprinkle more cheese on the top and bake in the over for a little while. you dont need any flour.

Let me offer this;
If I was limited with those ingedients, I would cook the noodles, then melt 2 kinds of cheeses on them and a little butter. Then, make me a big glass of milk to drink. Bless it and eat.

grated sharp cheddar cheese
grated mozzarella cheese
half and half
bacon
eggs
salt and pepper to taste

Cook your macaroni until it is almost done, drain. Add to a bowl and salt and pepper to taste. In a smaller bowl whisk two eggs and about a 1/2 cup of half and half. Pour over noodles and blend. Add grated cheese (as much as you like) and mix. Pour over remaining half and half until it reaches the top and top with uncooked bacon and bake in the oven @ 375 degrees until bubbly and bacon is cooked.

Don't over cook or it will be dry.

Mine is very similar in flavor to Stoffers or Banquet:

2 Cups Elbow or Shell macaroni - cooked according to directions on box

(alittle over done if you don't like well done noodles)

4 TBSP butter or margarine

3 TBSP flour

2 Cups of milk

1 Chicken boullion cube

(I smoosh it between my fingers when I add it to make sure it disolves easy)

1 Cup shredded cheddar

2 ounces velveeta cubed

1/2 tsp salt

1/4 tsp of pepper

Melt butter in a sauce pan, add flour and whisk smooth, slowly add milk - whisking to keep smooth. Bring mixture to a slow boil, stirring to keep from sticking or lumping. Add boullion cube, salt & pepper, and simmer until mixture starts to thicken, add cheeses and stir until melted.

You can combine the sauce & noodles on the stove top at this point and heat through and serve..but I like to bake it first.

In a greased casserole dish, combine sauce and macaroni. Stir until well covered.

Bake @ 375o for 30 minutes or until desired doneness (I like the brown bubblies on top)

I also add hot dogs or kielbasa before bake it most of the time.

I like Alton Browns Mac and Cheese. It has some ingredients you might not have, but you can just leave them out. It won't have quite the same flavor, but it will still be some good, basic mac and cheese. It does have an egg in it though, which is probably important.

1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs

Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Cheese.

I don't measure stuff when I cook, so here goes
in saucepan melt 2 T butter, add 2 T flour, stir for a minute. Then add 2 cups milk, while whisking at the same time. Whisk for a minute, DO NOT LEAVE THE ROOM, if milk boils over you have a mess. let it bubble slightly then add cheese, like 1./2 pound maybe I'd use half of each, you can always add more. then turn off heat and add to cooked noodles. If you don't know how to boil noodles I give up.
