What to do with whole chicken?!


Question: I baked a chicken tonight and only ate some of it. There's a lot left. What can I make for dinner tomorrow using it? I was thinking maybe soup or a la king? Please give me your recipe ideas! I need all the cooking help I can get. LOL thanks!!!!!!!!

:::Chicken Tortilla Soup:::
Yummy Mexican chicken soup that is super easy, just dump the ingredients in the crock pot and let it cook! It is delicious!

2-4 cans chicken stock (depending on desired thickness, personal preference)
2 cans crushed tomatoes
1 can diced tomatoes (can use another can of crushed if you don't like chunks or vice versa)
1 can whole corn kernels
1 can black beans
1 small can green chilies (optional to taste)
1 14-oz can enchilada sauce
1 small onion (diced)
2-3 cloves of garlic (minced)
2 tablespoons fresh cilantro
3 teaspoons cumin
3 teaspoons chili powder
Salt and Pepper to taste
1.5 lb. chicken (cut into pieces and cooked, I use breasts, but any meat will do, sometimes I use leftover meat from a whole chicken and just shred it up... whatever I have on hand really. Sometimes I even make it with beef!)


Optional Garnishes: sour cream, cheddar cheese, avocados and tortilla strips.

I just dump all of this in the slow-cooker and let it go for a few hours, sometimes I need to add a little extra chicken stock, depending on how thick it is...


For a great garnish, you could use store bought tortilla chips, but I like to make my own tortilla strips, and it is super easy! You need: 1 pkg. flour tortillas, and a few tablespoons of veg. oil. Just brush both sides of the tortillas with the veg. oil and cut into thin strips. Place strips on a cookie sheet and bake at 400 degrees for 7-8 minutes, turning them halfway through. They are crispy and delish in the soup!

Plant it in soil, water/baste daily, and wait for a chicken tree to grow...

Remove all the meat from the chicken...separate the white and dark meat......put the bones in a large pot.....add 1 C each sliced onions and celery ,1/2 C carrots and a bay leaf.....bring to a boil ...then turn down to a simmer and cook for several hours....strain...and use this as your base for a soup using the dark meat and vegetables.....

use the white meat for a chicken salad,,,,dice it...add minced onion,celery,pickles and mayo....great for lunches...or to eat with your chicken veggie soup.

Asian chicken salad.
Chop the chicken. Add a little Thai chili sauce and mayo. Add sesame seeds and a little sesame oil for aroma. Add celery, water chestnuts, jicama, bamboo or anything else interesting for some crunch. Add some chopped baby spinach with a little basil.
Make a sandwich with toasted bread or in a pita. Maybe with a little hummus with cumin on the side.

Southern-style Oven Fried Chicken Ingredients

Ingredients

?Pinch of pepper
?3 ounces buttermilk
?? cup cornflake crumbs
?1 pound uncooked boneless skinless (4 oz pieces)

Directions
1.Preheat oven to 365F. Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside.

2.Combine flour, salt and cayenne pepper together in a medium-size bowl. Place buttermilk and corn flakes crumbs in 2 separate shallow bowls.

3.Roll chicken breast halves in flour mixture and evenly coat each side. Next dip chicken into buttermilk and then corn flakes crumbs.

4.Place coated chicken breasts in prepared baking dish. Bake until chicken is tender and no longer pink, about 20 minutes (there is no need to flip the chicken during baking). Yields 1 breast per serving.

Next time you make fried chicken, dip your pieces in buttermilk before coating for moist, flavorful results.

When buttermilk is not available, try these easy equivalents:

? 1 cup buttermilk = 1 cup milk plus 1? teaspoons cream of tartar

I would make tortilla soup, chicken noodle soup, chicken chili, or enchiladas with chicken and cheese.

you can use the rest of the chicken to make a chicken salad...and have it with crackers or bread....just chop chicken up and add to it celery, onion, black olives(chopped), chopped apples, pecans or whetever nuts you like, and miralce whip or may-o, and a touch of mustard.

homemade chicken and noodles. save your extra chicken, boil all the chicken off all the bones. then strain, but save the water/juice. separate all the meat from the bones. place the liquid in pan and add the meat. heat that on top of your stove bringing it to a boil. let that go for a while. watch carefully so it doesnt go dry, then when your ready, add the noodles. and for the noodles you can use homemade or store bought it doesn't matter. cook until the noodles are done, wach carefully so that it doesnt go dry.. enjoy..
