Good suggestions for cooking a really great breakfast or brunch?!


Question: Both of these are great because you make them the night before....no rushing around in the morning! Serve with fresh fruit.

Stuffed French Toast

24 raisin bread slices, crusts trimmed
8 eggs
3 cups low fat or whole milk
1 cup half-and-half
1 cup granulated sugar
1 tablespoon vanilla extract
1/8 teaspoon ground nutmeg
Two 8-ounce packages Neufchatel or regular cream cheese, softened
Cinnamon sugar, optional


Instructions
1. Grease a 13 x 9-inch glass baking pan. Arrange 12 of the bread slices in the bottom of the pan, overlapping slightly.
2. Whisk 6 eggs in a large bowl until well beaten. Add the milk, half-and-half, and ? cup of the granulated sugar; mix well. Pour half of the milk mixture evenly over the bread slices.
3. Combine the remaining 2 eggs, ? cup granulated sugar, vanilla, nutmeg, and cream cheese in a blender. Cover and blend until smooth. Pour the cheese mixture over the bread in the pan. Arrange the remaining 12 bread slices on top of the cheese mixture, overlapping slightly, and pour the remaining milk mixture evenly over all. Cover with plastic wrap and refrigerate overnight.
4. Preheat the oven to 350 degrees F.
5. Remove the plastic wrap from the baking pan. Bake 55 minutes, or until a knife inserted in the center comes out clean. Remove from the oven and let stand 10 minutes. Sprinkle with cinnamon sugar, if desired.

Farmers Breakfast Casserole

24 ounces frozen hash brown potatoes
8 eggs , beaten
1 cup milk
1 1/2 cups ham , cut up into 1 inch pieces
8 ounces shredded cheddar cheese
1/2 cup onions , chopped
1/2 teaspoon salt
1/2 teaspoon pepper

In a 9 x 13 greased baking pan, layer potatoes, ham, onion and cheese. In a medium bowl, beat eggs; add milk, salt and pepper to eggs; beat well until thoroughly incorporated. Pour over potato/ham layers. Cover and refrigerate overnight. To prepare: Preheat oven to 350 degrees; remove cover and bake for approximately 60 minutes.

Yes. Fresh baked pastries, fresh fruit, Strawberry Blintz and Eggs Benedict. Or maybe an Italian Frittata.

Serve with Bloody Marys or fresh squeezed orange juice, coffee and tea.

Serve this as a main dish and you can serve some delicious things on the side like sausages, bacon, rolls,croissants, muffins, fresh fruit, juice, coffee, tea, champagne (think Mimosa's... Grand Mimosa's)

I personally love crepes, I buy the prepackaged kind at the store then make my own filling. You can slice strawberries and toss with some strawberry yogurt, use that as your filling then top with whipped cream. My favorite savory crepe is what I call a California crepe, I put sliced chicken, avocados, artichokes and smoked gouda cheese. There are many variations you can make depending on your tastes.

mum's apple sauce pancakes

INGREDIENTS
2 cups dry pancake mix
1 teaspoon ground cinnamon
2 eggs
1 cup applesauce
1 teaspoon lemon juice
1/2 cup milk

DIRECTIONS
In a large bowl, stir together pancake mix and cinnamon. Make a well in the center of the pancake mix. Add the eggs, applesauce, lemon juice and milk; stir until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

GS, it would help to know how many guests but this is an easy make ahead suggestion that can be doubled easily.

Directions:
Basic Strata Base:

In buttered 9x13-inch pan, spread bread, then cheese. Beat milk, eggs, dry mustard, onion and seasonings. Pour over cheese. Dot with butter, refrigerate overnight. Bake one hour at 350 degrees F.

Any-Kind-Of-Strata Recipe
Serves/Makes: 8
Ingredients:
***Basic Strata Base:***
12 slices bread, cubed
1 pound cheddar cheese, shredded (or half Swiss Cheese)
4 cups milk

A great breakfast, which will equal a brunch wud be a can of tuna and a roasted bread....tuna sandwich...

mix, a tiny can of tuna, half an onion, one teaspoon of mayonnaise, and pepper and salt to your taste, a squeeze of lemon...and mix together.. Roast two loafs of bread together till they are brown and crisp, and add the filling into one slice, and place the other slice over it.. press it..and you can have it as it is or bake it....garnish with some cheese or garlic sauce..................
