Why do Scone recipes recommend that you wrap the hot scones in a towel after baking?!


Question: Just wondering why it's recommended that you do this?
I can remember my mum doing it too, as they came straight out of the oven and I'd love to know the reason.

It is to make sure the tops stay soft and not cool down hard and crunchy.

I have only seen this on soda bread recipes - it is to soften the top so it is easier to slice. Most modern scone recipes do not call for this.

I make scones all the time, and my recipe doesn't call for that. It's probably to keep them soft, but I like them crunchy on top. I slather them with heavy cream and sprinkle with sugar before baking, so it's a sweet crunch on top....
