Here are some thoughts:

1. BBQ Brisket (you can cook in your crockpot until tender. Season with salt and pepper, pour bbq sauce over the top and let cook for 8-10 hours)
2. Meatloaf with macaroni and cheese, fresh or frozen green beans.
3. Chicken breasts cooked in cream of mushroom soup with rice.
4. Ground beef stroganoff over noodles
5. Chicken alfredo
6. Southwest casserole: ground beef, taco seasoning, mixed with rotel, velveeta, beans, pour over tortilla chips and baked.
7. Tacos, green salad
8. Chicken enchiladas, spanish rice, salad

Why not a vegetable or noodle soup with a salad & french bread. Sort of an olive garden menu.

beef stroggnoff!!
Omletes!!

For a super easy meal I throw chicken breasts in the crockpot w/ cream of mushroom soup & let it cook all day while I work.

you can make carbonara. very easy and yummy.

My ideas are:
Cottage Pie
Chicken and corn soup
Chicken in a red tomato sauce with olives/artichoke or whatever you like with cous cous
other bulk ideas of mine are chicken roast - easy and quite cheap -with roast spuds, tin/frozen vege and gravy
Potato and Leek soup
Minestrone
BBQ ribs
Butter and s&p green beans
