What's a good side dish for enchiladas?!

my mom is mexican so sh make enchildas. what she always make is rice and then she puts chips out.

Also corn cake and mashed potatoes with green and red peppers is good.

MEXICAN POTATO AND CORN CASSEROLE

2 lbs. potatoes, peeled and sliced
Salt and pepper to taste
4 ears fresh corn, cut off the cob, or 2 c. frozen cream-style corn
1 (4 oz.) can green chilies, chopped
2 tbsp. butter
2 c. buttermilk
2 tbsp. chopped chives
2 c. grated Monterey Jack cheese

Butter a 9x13-inch baking dish. Arrange half of the potato slices in the dish. Season with salt and pepper. Sprinkle with half of the corn and half of the chilies. Dot with butter. Repeat the layers. Pour the buttermilk over all. Bake in a 375 degree oven for 1 hour. Remove the casserole from the oven and sprinkle with chives. Top with the cheese, and return to the oven until the cheese melts.

Cooked brown rice with salsa and grated cheese.

Since Enchiladas are a bit on the heavy side... I always like to pair it with a nice salad, and use salsa or guacamole instead of a dressing.

RICE AND BEANS!!! And add a bit of salsa.. and DAMN you got yourself a full blown mexican meal. Don't forget the tortillas!

We always eat that when we're having tacos.
