I do it all the time. Put the grease back in the can that it come out of. I do it for fish, chicken and fries. I have a separate can for all of them. I keep them in the Crisco can over the stove in the cabinet. What I do is write a date on the lid, of when I opened it ,when the grease starts to get brown then change the grease. Don't mix the grease together have on can for fish, chicken, and fries, If you cook chicken with flour the flour will go to the bottom of the pan. What I do is scrape the top layer of grease of and throw away the brown grease at the bottom.

I wouldn't take the chances with the chicken.

I've done it. The oil seems to get too hot for anything not to be killed.

it will be dark and cloudy before it turns rancid. it does depend on what kind of oil you are using. i would cook the chicken and then the fish. the level of oil will shrink so you may not have a problem. you will also need to strain the oil between frying ( to get all those crunchy floaty things that fall off the meat). good luck
