Question: Tammy's Potatoe Casserole

Ingredients:
5lb or Larger bag of potatoes
1 Diced Bell Pepper
1 Diced Onion
Bacon Bits or 1/2 Lb (more or less) cooked crispy bacon
Mushrooms, freshly sliced or in a can, if desired
Shredded Cheese if desired
Seasoning (I use Tex--Joy Steak Seasoning)

Directions:
Preheat oven to 400d.- Dice potatoes in a cassarole dish and season.- Add bell pepper, onion, bacon , and mushrooms.- Sprinkle a little water over potatoes and cover with foil.- Bake for approx 1 hour to an hour and half.- Once potatoes are done sprinkle shredded cheese and let melt in oven.- ENJOY!

German potato salad...it's great.

Scalloped Potatoes with Bacon

1/2 pound bacon, coarsely chopped
1 teaspoon butter
3 pounds Russett potatoes, peeled and thinly sliced
1 large onion, thinly sliced
2 teaspoons salt, divided
Freshly ground black pepper, to taste
2 tablespoons flour, divided
1 pint light cream
1 cup chicken stock
Preheat oven to 350°. Over medium heat, cook bacon in a sauté pan until lightly crisp. Remove bacon with a slotted spoon, reserving grease. Butter the bottom and sides of a 9x13-inch glass baking dish. Place one layer of sliced potatoes over the bottom of the dish. Scatter a handful of sliced onions. Sprinkle with 1/2 teaspoon salt and pepper to taste. Drizzle 1 teaspoon bacon grease over the onions, then scatter a handful of chopped bacon over this. Sprinkle 1 tablespoon flour over layer. Add another layer of potatoes and onions, repeating with the seasoning, bacon grease, bacon, and flour. Add one final layer of potatoes; sprinkle with the remaining salt and pepper. Pour cream and stock over potatoes. It should barely cover the top layer. Bake at least 1 hour, or until potatoes are tender.

Well I thought of a berner Rosti - swiss style potato cake- Cook whole potatos and chill over night in jacket.
Peel then grate potato. Dice bacon and fry turning ONLY once, use a plate it's way easier unless you do small ones. They dont use egg or anything but you can if you want more binding qualities, depends on the spuds you use.

Having said that I just love German potato salad.... so good.

How about a hash - like corned beef hash, only switch out the corned beef for the bacon.

This potato salad is soooo good! Like a stuffed baked potato.

Decadent Potato Salad

5 lbs Red Skin Potatoes
1 lb Bacon
1 Cup Sour Cream
1 Cup Helman's Mayonnaise
1 Bag Shredded Cheddar Cheese

Boil potatoes until done. Cut in bite sized pieces. Cook and crumble bacon. When potatoes and bacon are cool, combine all ingredients and eat it up!

one that i like to make as a side for any meal is to slice the potatoes ( always skin on ) roughly 1/4" . slice the bacon the same size . dice a small onion .cook the bacon till it`s almost how you like it . remove the bacon and leave the fat in the pan . add the potatoes and fry on one side till golden brown ( usually 5 min. or so ) . flip the potatoes and add the onions and bacon to the pan . try to work the onions to the bottom of the ingredients . after about 5 more minutes it should be done . put several paper towels ( i use a strainer ) in a bowl big enough to handle everything . let drain for a few and then put into serving bowl , platter , or whatever . you can have some shredded cheese and sour cream on the side . or pick your fav condiments .

Cut up and peel (or don't peel, it doesn't matter) some potatos, and boil them.
Fry some bacon, onions and garlic.

When the potatos are soft, mash them with butter milk, and sour cream. Add the bacon, onion and garlic. Cheese is good in there too, and chives, or rosemary.

with St Patricks day coming up and many Americans taking the true Irish American way out with the made up dish of Corned beef and Cabbage...why not impress your friends and family with a true Irish comfort food...here's the recipe of my sainted Grandmother

Colcannon

3 pounds potatoes scrubbed
2 sticks butter
1 1/4 cups hot milk
freshly ground black pepper
1 head cabbage cored and shredded
1 pound ham or bacon cooked earlier
4 scallions finely chopped
chopped parsley leaves for garnish

steam the potatoes in there skins for 30 minutes
peel them using a knife and a fork
mash thoroughly to remove all lumps....add 1 stick butter and hot milk....stirring the whole time...add cracked pepper to taste
boil cabbage in hot water till darker color...add 2 tbsp butter to tenderize it...cover with lid and cook for two more minutes..drain thoroughly..chop into pieces.....put the ham or bacon into a pan and cover with water...cover and simmer for 45 minutes until tender...chop into small pieces....add ham..scallions...and cabbage to potatoes..stir in gently..serve in soup bowls...make an indentation in top and add butter...sprinkle with parsley...Enjoy!!!!!

You can make potato soup. I can't remember exactly how to make it but I know it has potatoes, bacon, cheddar cheese, and cream. If you need a recipe you can always go to yahoo food and search for it.

BTW: rickey_d, that recipe can't be from your sainted grandmother...I just found the exact same one on foodnetwork.com

Cut bacon into strips add finly sliced two brown onions sliced half a cabbage and thin sliced potato scallops saute 4 ten mins add i cup veg stock course black pepper simmer till potatoes are soft and stock is minimal toss lump of butter through quick very tasy and cheap !!

Ingredients:

1 kg potatoes, sliced or cubed
100 g bacon
150 ml milk
1 dessertspoon butter
salt and pepper to taste

Method:

Boil potatoes.
Give the bacon to the dog.
Mash potatoes with milk, butter, salt and pepper.
