2 (10 inch) flour tortillas
2 tablespoons vegetable oil
1 small onion, chopped
1/2 red bell pepper, chopped
1 teaspoon minced garlic
1 (15 ounce) can black beans, rinsed and drained
1 teaspoon minced jalapeno peppers
3 ounces cream cheese
1/2 teaspoon salt
2 tablespoons chopped fresh cilantro
Wrap tortillas in foil and place in oven heated to 350 degrees F. Bake for 15 minutes or until heated through. Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring. Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture. Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately.

Black Bean Burrito Recipie
2 to 2 1/2 cups (cooked) black beans, drained
1 fresh tomato, chopped
3 green onions, coarsely chopped
1/4 fresh cilantro, chopped
1 garlic clove, crushed
3 tablespoons lime juice
1/4 cup canola oil
1/4 teaspoon crushed red pepper
1/4 teaspoon hot sauce
sea salt, to taste
ground pepper, to taste
Fixins for Burritos
2 packages flour tortillas
2 ripe hass avocados, mashed
2 cups cooked rice
1/2 grated Monterey Jack or soy cheese
In a large bowl mix together the beans, tomato, green onion, and cilantro. Set aside.
In a small bowl, combine the garlic and the lime juice. In a slow, steady stream whisk in the oil until the dressing has emulsified. Combine the lime dressing and bean mixture. Stir in the crushed red pepper and hot sauce. Season with salt and freshly ground pepper.
Preheat the oven to 350°F. Soften the tortillas briefly in the oven; remove from oven.
Spread on the avocado, followed by the cheese, rice, and bean mixture. Roll up the tortillas and arrange on a baking sheet. Place in the oven and heat through for 15 minutes or until the cheese has melted.

Black beans, dried or canned (2 cans)
Garlic cloves
Fresh onion
Green pepper
2 tbsp. olive oil
Flour burritos
Cheddar cheese
Mild or med. picante sauce
Cook black beans according to directions on package, if using dried. Saute garlic, onions, green pepper in 2 tablespoons olive oil; mix with either cooked dried beans or canned beans. Heat flour burritos until warm. Place black beans mixed with sauteed onion, garlic and green pepper on top of burritos. Sprinkle shredded Cheddar cheese over that. Spoon mild or medium picante sauce over that. Fold and enjoy.
