Bread Question?!


Question: Okay, so I made some bread in muffin pans at 400 degrees for 10-15 minutes. They turned out delicious on the inside but burnt on the outside (and were only in for 10 minutes). I know this means the temperature should be a bit lower.

My question is, if that is the recipe and I want to convert the "muffin" pan bread into a loaf of bread, what would the temperature be I should bake it at, and how long should I bake it?

First off, get an oven thermometer and check the temp of your oven. The bread recipes I have say preheat the oven to 400 or 425 F (depending on recipe), and lower the heat to 350/375 after 15 minutes. Bread baked in muffin tins would be a problem.

Just realized, I didn't fully answer. My recipes call for an hour to an hour and 15 minutes. (This is for sourdough bread.) Remove the loaves from the pans and place on a cooling rack. When the bread is done, it should have a hollow sound when it is thumped.

It could also mean you've got your oven rack to low in the oven.
