What can I substitute with?!


Question: I've been put on a low salt diet. Many of my recipes call for mushroom soup. I tried the "Healthy Choice" but did not like it.
What can I use as a substitue, in casseroles, for cream of mushroom soup.

Cream of Mushroom Soup to Use in Casseroles

1 cup chopped mushrooms | 2 cups stock | 2 cups milk | chopped onion | 2 tbsp butter | 2-3 tbsp flour

Saute onion and mushrooms in butter, add flour, cook until bubbly. Add broth and milk, heat until hot throughout, use in casserole instead of canned soup.

You can also substitute 1 cup of plain yogurt for the can of mushroom soup.

How about making your own white sauce. It isn't that hard. Depending on how thick you need it the ingredients are flour, butter (or margarine), salt (which you can lessen or eliminate), pepper and milk (you can use 2%, skim or whatever your diet allows).
