Hiya Butterfly :o) xx Diced pork is great, and very versatile too! Here's one of my favourite recipies - I make this at home all the time xxx

PORK & SWEET POTATO CASSEROLE

You will need:
2 fat cloves of garlic
1 medium onion
2 large sweet potatoes
100g (4oz) of fresh spinach
salt and black pepper
1 oz plain flour
700g of diced pork
2 tablespoons sunflower oil
3 quarters of a pint of vegetable stock
2 teaspoons dried mixed herbs
400g (14 oz) tin of chopped tomatoes
2-3 drops of hot chili sauce

Peel and crush the garlic cloves and peel and roughly chop the onion. Peel the sweet potatoes and cut them into 1 inch cubes. Wash the spinach and remove the stalks. Put the flour on a plate, season it with salt and pepper and add the pork, turning well to coat it. Heat the oil in a large pan or wok. Fry the garlic, onion and pork for about 4/5 minutes or until the pork is lightly coloured. Add the stock, mixed herbs, tomatoes and chili sauce to the pan. Season the mixture and bring it to the boil, then cover with a lid and simmer for 30 minutes. Add the sweet potatoes and replace the pan lid. Simmer for 15 minutes or until the potatoes are nice and tender. Add the spinach and stir it through, cooking for an extra 3 minutes until it has wilted. This is great with either brown rice, or the veggies of your choice :o) xx ENJOY xx
