Whether I am making them for sweets or for a savoury cracker like biscuit I take some rolled or steel cut oats, and toast them in a dry fry pan, just until there light brown and nutty, let them cool while you assemble the rest of the mix, I use veg shortening for sweet ones so there almost like a wholemeal biscuit, and also use brown sugar for a nice molassey taste, no leavening as you want a flat disk, for savoury I used all butter as you want a crisp one, I also use at times a bit of cheddar cheese or romano for a kick.

I process the oats down to a fine-ish meal not flour, add them to the butter and seasoning for the savoury or the sweet mix, 2/3 cup of whole meal or plain flour, an egg for the sweet and some milk or cream for the savoury, mix and then place the dough on some plastic wrap/cling film and roll it into a log 2-3" diameter 10-15 cm. Chill it solid then with a sharp paring knife cut off disks and place the 3-4" apart on the pan and cook them for 10-12 minutes at 350 d F 160 d C or Gas mark 3.5.

Let them cool, if you have some coarse salt or muscavado sugar you can brush them with milk and sprinkle that one for the appropiate biscuit before you bake them off, keep them in a sealed tin for no more than 2 weeks, mine never last that long, I like the savoury ones with pate, cheese spread or in my scotch broth.

2/3 cup milk

1. Heat oven to 450oF.
2. Stir all ingredients until soft dough forms; beat vigorously 30 seconds. Turn onto surface dusted with Bisquick mix. Roll in Bisquick mix to coat. Shape into ball; knead 10 times. Roll 1/2 inch thick. Cut with 2-inch cutter dipped in Bisquick mix. Place on ungreased cookie sheet.
3. Bake about 8 minutes or until golden brown.

INGREDIENTS
2 cups all-purpose flour
1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup shortening
1 1/4 cups quick cooking oats
3/4 cup milk



DIRECTIONS
In a bowl, combine the first five ingredients. Cut in shortening until mixture resembles coarse crumbs. Stir in oats and milk just until moistened. Turn onto a lightly floured surface. Roll to 3/4-in. thickness; cut with a floured 2-in. biscuit cutter. Place 1 in. apart on an ungreased baking sheet. Bake at 375 degrees F for 15-20 minutes or until lightly browned. Serve warm.
