when you boil the water.
add a splash of vinegar befor you put the egg in.
it helps keep all of the white stuff together so it not all messy while it being poached.
thats a tip from food channel.
then,
crack the egg into a small dish and slowly slide the egg into the water.

A true poached egg is made by breaking an egg, and dropping the contents into boiling water that you are stirring. You keep stirring it until it is fully cooked. So it is kind of like a boiled egg, but without the shell.

start with a pot of boiling water
crack and egg and pour contents in pot (w/o shell)
cook egg until yolk is runny, but outside is a little hardened, all whites should be cooked

In a large, deep saute pan bring 2 1/2-inches of water to a boil. When the water comes to a boil, lower the heat to a bare simmer. There should only be small, infrequent bubbles on the surface. Add 1/4 cup vinegar and some salt to the water. Crack 1 egg into a small bowl, making sure the yolk remains unbroken. Gently slip the egg into the simmering water, using a spoon to make sure the egg is completely covered. Repeat with the remaining eggs. Cook to desired degree of doneness, 3 to 5 minutes. When the eggs are done, remove from the water with a slotted spoon. Place on clean paper towels or kitchen towel to drain. Set aside.

In a pan of near boiling water add another small dish with hot water in that pan and slowly add the egg to the container. This will cook it with out letting run all over the place.

Its called the water bath method. :o) Hope it works well for you.

You can used this poached egg on top of a crab cake on top of a English muffin and put some holidaise sauce on top. YUM YUM YUM!

add a splash of vinegar to the water before poaching egg. It will make the egg keep together, this does not effect the taste of the egg at all.
